BUCKEYES I

Buckeyes I image

This recipe is so good that I double it whenever I make it. Since it is peanut butter balls dipped in chocolate it is almost like candy. Real buckeyes are nuts that grow on trees and are related to the horse chestnut.

Tips:

  • Use fresh, high-quality ingredients for the best flavor.
  • Make sure the egg whites are at room temperature before whipping them. This will help them reach their full volume and create a light and airy texture.
  • Whip the egg whites gradually, starting on low speed and increasing to high speed as they begin to foam. This will help prevent them from curdling.
  • Fold the dry ingredients into the egg whites gently. Overmixing will deflate the egg whites and make the macarons tough.
  • Pipe the macarons onto a parchment paper-lined baking sheet, leaving about 1 inch of space between each macaron. This will allow them to spread and flatten slightly during baking.
  • Tap the baking sheet on the counter a few times to release any air bubbles from the macarons.
  • Bake the macarons at a low temperature for a long period of time. This will help them dry out and develop a chewy texture.
  • Let the macarons cool completely before filling them. This will help prevent them from cracking.
  • Fill the macarons with your favorite filling, such as buttercream, ganache, or jam.
  • Store the macarons in an airtight container in the refrigerator for up to 3 days.
