3/4 cup hot sauce (I like Frank's)
8 tablespoons (1 stick) unsalted butter
1 rotisserie chicken, skin discarded and meat shredded
1 rotisserie chicken, skin discarded and meat shredded
One 2-foot Italian bread loaf, sliced in half lengthwise
1 stalk celery, thinly sliced
1 small head iceberg lettuce, shredded
Blue Cheese Ranch, recipe follows
1 cup crumbled blue cheese
1/2 cup mayonnaise
1/4 cup sour cream
2 tablespoons minced chives
1 tablespoon vinegar
1 teaspoon onion powder
1 teaspoon garlic powder
Salt and freshly ground black pepper

Steps:

  • Put the hot sauce and butter in a small skillet and heat until melted and combined. Let cool slightly, then pour over the shredded chicken in a medium bowl and toss to coat completely.
  • To assemble the sandwich, spread the chicken in an even layer on the bottom half of the bread. Top with the sliced celery and an ample amount of shredded lettuce. Spread the Blue Cheese Ranch on the top half of the bread and close the sandwich, using toothpicks to secure it. Cut into pieces and serve.
  • Stir together the blue cheese, mayonnaise, sour cream, chives, vinegar, onion powder and garlic powder in a medium bowl until well incorporated. Season with salt and pepper.

The first time I ever had "buffalo wings", I just about flipped!! What an awesome idea that lady from Buffalo, New York had!!! Ever since then, I've used the same concept making dips, pizzas, salads, and my latest concoction...HOAGIES! They are REALLY good!!

4 hoagie rolls, split in half lengthwise
3/4 cup butter, softened
2 tablespoons minced garlic
2 tablespoons chopped fresh parsley
1 (20 ounce) bag southwestern-seasoned chicken breast, strips 7 serving size
1 (1/2 cup) bottle Frank's red hot sauce, original or Buffalo Wing flavor
4 tablespoons butter
1 tablespoon sweet baby ray's barbecue sauce
1/2 teaspoon chili powder
8 slices muenster cheese
2 cups shredded lettuce
salt and pepper
2 tablespoons finely chopped celery
12 slices tomatoes, thin slices, I like Roma's (plum)
8 tablespoons thick chunky blue cheese dressing, I like Marie's

Steps:

  • In frying pan combine chicken, hot sauce, 4 Tbl. butter, bbq sauce and chili powder.
  • Heat til simmering. Simmer on very low.
  • In small bowl, combine 1 1/2 sticks soft butter, garlic and parsley.
  • Spread insides of hoagie rolls with butter mixture, (both cut sides.).
  • Place open-faced on cookie sheet and broil til lightly toasted. Or 4 minutes at 400º.
  • Top each bottom half of hoagie rolls with meat mixture, (pile high), then top each with 2 slices muenster cheese.
  • Return to oven and bake 2 more minutes.
  • Remove from oven and top each with lettuce tossed with celery, and a pinch each of salt and pepper.
  • Top each with 3 tomato slices.
  • Top each with 2 Tbl. blue cheese dressing. Place on top halves of toasted hoagie rolls. Cut in half on the bias. Makes 4 hoagies.
  • *I use Tyson(fully cooked)Southwest Chicken Breast Strips for this this, but it just would NOT go into the computor right.
  • **Note: You can make these with a purchased rotisserie chicken from your local grocery store, too. Just pick the meat off, and cut it into pieces. Leftover chicken, even BBQ'ed, also works well for this. In a PINCH, canned chicken (2-3 large cans) drained, also works.
  • Just use whatever you have on hand for convenience or have a taste for!

¾ cup cornstarch, divided
2 lb chicken wings, rinsed and patted dry
¼ cup all-purpose flour
1 teaspoon paprika
1 teaspoon garlic powder
1 teaspoon cayenne pepper
2 teaspoons baking powder
2 teaspoons salt
1 teaspoon black pepper
⅔ cup water
peanut or vegetable oil, for frying
½ cup buffalo sauce
ranch or blue cheese dip, for serving
1 stalk celery sticks, for serving, cut into sticks

Steps:

  • In a bowl, toss ¼ cup (30 grams) of cornstarch and the chicken wings together until fully coated. Transfer the wings to a wire rack and let rest and dry out for 20 minutes, ideally in the fridge if you have space.
  • In a medium bowl, whisk together the remaining ½ cup of cornstarch, the flour, paprika, garlic powder, cayenne, baking powder, salt, and pepper. Gradually whisk in the water, breaking up any lumps and mixing until smooth. The batter should be slightly runny.

Steps:

  • Preheat an oven to 325 degrees F (165 degrees C).
