ROASTED CHICKEN WITH FISH-SAUCE BUTTER

Roasted Chicken With Fish-Sauce Butter image

Roasting chicken thighs in a hot oven is a hands-off way to achieve two of life's greatest pleasures: crispy skin and golden schmaltz. And you want that chicken fat because it will crisp hand-torn bread into croutons. This meal is made even more lovely thanks to a bold but balanced fish-sauce butter that you whip up on the stovetop while the rest of the meal takes care of itself in the oven. Be sure to start with cold butter; the gradual melting of the fat helps thicken the sauce without breaking it.

Provided by Eric Kim

Categories     dinner, weeknight, poultry, main course

Time 45m

Yield 4 servings

Number Of Ingredients 9

4 bone-in, skin-on chicken thighs (about 2 pounds)
Kosher salt and black pepper
2 tablespoons olive oil
3/4 pound bread, crusts removed, bread torn into bite-size pieces (about 4 cups; see Tip)
1 tablespoon dark brown sugar
1 tablespoon fish sauce
1 tablespoon lemon juice
3 tablespoons cold unsalted butter, kept whole
Cilantro leaves with tender stems, for serving

Steps:

  • Heat oven to 450 degrees. Pat the chicken dry with paper towels and season lightly with salt and pepper. (The fish-sauce butter is plenty salty, so don't overdo the salt here.) Arrange the chicken skin-side up on a sheet pan and drizzle the oil over the chicken skin, coating it evenly. Roast until the chicken is light gold and the sheet pan is pooling with hot, rendered chicken fat, about 25 minutes.
  • Take the sheet pan out of the oven, scatter the bread around the chicken and toss gently to coat in the chicken fat. Place the pan back in the oven and roast until the chicken is golden, crispy and sizzling (you'll hear it), about 15 minutes.
  • While the chicken roasts, combine the brown sugar, fish sauce and lemon juice in a small saucepan and bring to a simmer over medium heat. Cook, occasionally swirling the pan or stirring the sauce with a wooden spoon, until bubbling vigorously and the mixture has reduced by about half, 2 to 3 minutes. This part is fun: Turn off the heat and add the butter, constantly swirling the pan or stirring with a wooden spoon, until all of the butter has melted and incorporated into the fish sauce mixture.
  • To serve, scatter the cilantro all over the chicken and bread and spoon some of the fish-sauce butter over each chicken thigh, reserving some to add to each plate for dipping the chicken and croutons while eating (which is divine).

ROASTED CHICKEN THIGHS WITH PEANUT BUTTER BARBECUE SAUCE

Roasted Chicken Thighs With Peanut Butter Barbecue Sauce image

Peanut butter is the surprise guest in this spicy-sweet barbecue sauce, which cooks up in just 10 minutes. This versatile sauce, which adds nutty richness and depth, keeps for 2 weeks in the fridge and also freezes well. You'll have quite a bit: This recipe yields 2 cups of sauce. It's great to have on hand, doing double-duty as a sauce or a fantastic marinade for chicken or baby back ribs. (If allergies are a concern, substitute in almond butter for the peanut butter.) Serve with sautéed green beans, roasted broccoli or coleslaw.

Time 4h25m

Yield 10

Number Of Ingredients 19

1 tablespoon LAND O LAKES® Butter
¼ cup finely chopped onion
1 tablespoon all-purpose flour
¾ cup chicken broth, divided
½ teaspoon dry mustard
½ teaspoon salt
4 cups finely chopped cooked chicken
2 egg yolks, beaten
¼ teaspoon hot pepper paste
1 cup cracker crumbs
Canola oil for frying
⅓ cup LAND O LAKES® Butter
2 teaspoons minced garlic
1 tablespoon all-purpose flour
1 cup milk
1 pinch fresh thyme
1 pinch fresh oregano
1 pinch fresh basil
¼ teaspoon salt

Steps:

  • Melt butter in a large heavy saucepan over low heat. Add onion and cook until tender. Stir in flour; cook and stir until smooth, about 1 minute. Reduce heat if mixture browns too quickly.
  • Gradually add 1/2 cup of chicken broth and cook over medium heat stirring constantly until thickened and bubbly. Stir in dry mustard, salt, and chopped chicken; whisk in egg yolks.
  • Cook over medium heat stirring constantly for 4 to 5 minutes. Remove from heat. Refrigerate 3 to 4 hours or preferably overnight.
  • Combine remaining 1/4 cup chicken broth and hot pepper paste; stir into chilled chicken mixture.

  • Pour 1/2 inch oil into skillet. Heat to 375 degrees F (190 degrees C) over medium-high heat. When oil is hot, fry the croquettes until golden brown; do not turn the croquettes until they are well browned on the first side, 4 to 5 minutes. Turn and cook the other side, 4 to 5 minutes. Fry in batches, as needed. Drain on paper towels.
  • Melt 1/3 cup butter in a skillet over medium high heat. Add garlic and cook for 30 seconds to 1 minute, stirring constantly to prevent it from burning. Stir in flour and whisk continuously for 1 minute.
  • Pour in the milk and herbs and continue to cook, whisking constantly, until sauce begins to thicken, about 1 minute. Ladle sauce over croquettes on serving plates.

These little bundles are packed with flavor. You'll definitely want to serve this with a nice crusty bread so you can clean your plate of all of that delicious sauce! Remind guests to remove toothpicks or kitchen twine before eating!

Provided by Kim's Cooking Now

Categories     Meat and Poultry Recipes     Chicken     Chicken Thigh Recipes

Time 55m

Yield 4

Number Of Ingredients 12

4 ounces goat cheese with garlic and herbs
¼ cup chopped sun-dried tomatoes with herbs (such as California Sun-Dry®)
¼ cup flour
1 ½ teaspoons salt
½ teaspoon ground black pepper
1 ½ pounds boneless, skinless chicken thighs
4 tablespoons butter, divided
2 tablespoons olive oil
¼ cup chopped fresh sage
½ cup chicken broth
½ cup white wine
lemon, juiced

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Combine goat cheese and sun-dried tomatoes in a small bowl; set aside. Combine flour, salt, and pepper in a second small bowl and set aside.
  • Place chicken thighs on a cutting board and layer a piece of plastic wrap on top. Pound thighs slightly with a meat mallet to flatten. Divide goat cheese mixture among all of the flattened chicken thighs; spread evenly down the middle. Starting at the short end, roll up the chicken thighs and secure with toothpicks or kitchen twine.
  • Dredge chicken rolls in the flour mixture, shaking off any excess flour, and set on a plate. Repeat until all of the rolls have been coated with flour.
  • Heat 2 tablespoons of butter and olive oil in a skillet over medium-high heat. Place chicken thigh rolls in pan and cook until all sides are browned, about 2 minutes per side. Transfer rolls to an oven-safe dish.
  • Bake in the preheated oven until chicken is no longer pink in the center and the juices run clear, about 25 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
  • Meanwhile, melt remaining 2 tablespoons butter in the skillet over medium heat. Once butter starts to bubble and turn brown, add chopped sage and swirl the pan until sage becomes fragrant. Pour in broth, wine, and lemon juice. Bring sauce to a simmer and reduce heat to low.
  • Transfer chicken rolls back to the skillet and cook in the sauce for about 2 minutes, turning frequently to coat. Plate rolls and spoon sauce over top.

1/2 cup fresh flat-leaf parsley, a couple of handfuls, chopped
Salt and black pepper
A few shakes of hot sauce, such as Tabasco
1/4 cup EVOO (extra-virgin olive oil)
4 boneless, skinless chicken breasts
1 teaspoon dried thyme, 1/3 palmful
2 teaspoons paprika, 2/3 palmful
1/2 pound chorizo sausage, cut into quarters lengthwise, then finely chopped
1/2 pound button mushrooms, stemmed and thinly sliced
2 portobello mushroom caps, thinly sliced
1/2 pound shiitake, oyster, or cremini mushrooms, or whichever funky mushrooms your store carries, stemmed and thinly sliced
1 medium yellow onion, chopped
4 large garlic cloves, chopped
1/2 cup dry sherry, a couple of glugs
1 cup chicken stock

Steps:

  • Put the potatoes in a saucepot, cover them with water, and place the pot over high heat to bring them to a boil. Cook them for about 12 minutes, or until they are fork tender. Once cooked, drain the potatoes and return them to the pot, then place them over medium heat for about 1 minute to dry them out a bit. Turn the heat off and add the chives, butter, half of the parsley, salt, pepper, and hot sauce to taste. Stir the potatoes until the butter has melted, then transfer to a serving platter.
  • While the potatoes are cooking, preheat a large skillet over medium-high heat with 2 tablespoons of the EVOO, twice around the pan. Season the chicken with salt, pepper, the thyme, and the paprika. Add the chicken to the skillet and cook it on each side for 5 to 6 minutes, or until it is cooked through. Remove the chicken from the skillet to a plate and cover it loosely with foil to keep it warm. Return the skillet to the cooktop over medium-high heat. Add the remaining 2 tablespoons of EVOO and the chorizo and cook, stirring it frequently, for about 2 minutes. Remove the chorizo from the skillet to a plate using a slotted spoon and reserve.
  • Turn the heat up to high and add the mushrooms to the skillet. Spread them out in an even layer and resist the temptation to stir for a couple of minutes so that the mushrooms can start to brown. Once they are brown, go ahead and shake the pan up, stir, and continue to cook them for 2 minutes more, then add the onions, garlic, and reserved chorizo and season with salt and pepper. Continue to cook, stirring every now and then, for about 3 minutes, or until the onions start to look tender. Add the sherry and cook for 1 minute more, then add the chicken stock and bring it up to a bubble. Simmer for about 2 minutes. Add the remaining parsley and stir it to combine, then taste and adjust the seasonings with salt and pepper.
  • To serve, arrange the cooked chicken breasts on serving plates, top with the mushroom-chorizo sauce, and serve the butter and herb spuds alongside.
  • Tidbit
  • Sherry is a great thing to have on hand in the wine rack. You can use it in Marsalas, dressings, soups, or any chicken dish. One of my favorite appetizers is mushrooms cooked in garlic, butter, and sherry.

  • In seperate smaller skillet combine the other 1/2 stick of butter, 1.5T dillweed, 2T lime juice and juice of 1.5 lime (save at least 1/2 of a lime for garnish). Heat over low heat until combined and melted.

  • Garnish with lime slices. Slice off a thin circle of lime. Cut 1/2 down center and then pull ends in opposite directions to create a spiral like shape.
  • I serve this dish with rice or parmesan angel hair pasta and a vegetable.

Tips:

  • Use a variety of spices. The key to a flavorful butter chicken sauce is to use a variety of spices. Some common spices used in butter chicken sauce include garam masala, cumin, coriander, turmeric, and chili powder.
  • Don't be afraid to adjust the heat level. Butter chicken sauce can be made mild, medium, or spicy. If you like spicy food, add more chili powder or cayenne pepper. If you prefer a milder sauce, reduce the amount of chili powder or cayenne pepper.
  • Use high-quality ingredients. The better the quality of your ingredients, the better your butter chicken sauce will be. Use fresh tomatoes, onions, and garlic. If you can, use organic or locally-sourced ingredients.
  • Don't overcook the chicken. Chicken breast is a lean meat, so it can easily become dry if it is overcooked. Cook the chicken until it is just cooked through, about 8-10 minutes.
  • Serve the butter chicken sauce with your favorite sides. Butter chicken sauce can be served with rice, naan, or roti. It can also be used as a topping for grilled chicken or fish.

Conclusion:

Butter chicken is a delicious and versatile dish that can be enjoyed by people of all ages. The sauce is rich and creamy, with a perfect balance of spices. It is a great dish for a weeknight dinner or a special occasion. If you are looking for a new recipe to try, I highly recommend butter chicken.
