The secret to Ina Garden's zesty Potato Salad recipe from Barefoot Contessa on Food Network? Buttermilk and two mustards: Dijon and whole grain.

Provided by Ina Garten

Categories     side-dish

Time 30m

Yield 6 to 8 servings

Number Of Ingredients 10

3 pounds small white potatoes
Kosher salt
1 cup mayonnaise
1/4 cup buttermilk
2 tablespoons Dijon mustard
2 tablespoons whole-grain mustard
1/2 cup chopped fresh dill
Freshly ground black pepper
1/2 cup chopped celery
1/2 cup chopped red onion

Steps:

  • Place the potatoes and 2 tablespoons of salt in a large pot of water. Bring the water to a boil, then lower the heat and simmer for 10 to 15 minutes, until the potatoes are barely tender when pierced with a knife. Drain the potatoes in a colander, then place the colander with the potatoes over the empty pot and cover with a clean, dry kitchen towel. Allow the potatoes to steam for 15 to 20 minutes.
  • Meanwhile, in a small bowl, whisk together the mayonnaise, buttermilk, Dijon mustard, whole grain mustard, dill, 1 teaspoon of salt, and 1 teaspoon of pepper. Set aside.
  • When the potatoes are cool enough to handle, cut them in quarters or in half, depending on their size. Place the cut potatoes in a large bowl. While the potatoes are still warm, pour enough dressing over them to moisten. Add the celery and red onion, 2 teaspoons of salt and 1 teaspoon of pepper. Toss well, cover, and refrigerate for a few hours to allow the flavors to blend. Serve cold or at room temperature.

1/4 cup dill sprigs
1/4 cup finely chopped fresh chives

  • Cover potatoes with water by 1 1/2 inches in a 2-quart pot, and bring to a boil. Reduce heat, and simmer until potatoes can be pierced easily with the tip of a knife, about 20 minutes. Drain, and let cool completely. Cut potatoes into halves, or quarters if large.

Nutrition Facts : Calories 146 g, Cholesterol 8 g, Fiber 3 g, Protein 5 g, SaturatedFat 2 g, Sodium 326 g

Tips:

  • For the best flavor, use fresh, high-quality ingredients. This means using real buttermilk, mayonnaise, and sour cream. You should also use fresh herbs and vegetables.
  • If you don't have buttermilk, you can make your own by adding 1 tablespoon of lemon juice or vinegar to 1 cup of milk. Let it sit for 5 minutes before using.
  • You can use any type of potato for this salad, but waxy potatoes, such as red potatoes or Yukon Gold potatoes, hold their shape better than starchy potatoes, such as Russet potatoes.
  • Be sure to cook the potatoes until they are tender but still firm. You don't want them to be mushy.
  • Let the potato salad cool completely before serving. This will help the flavors to meld and will make the salad easier to handle.
  • Garnish the potato salad with fresh herbs, such as dill, chives, or parsley, before serving.

Conclusion:

Buttermilk ranch potato salad is a classic summer side dish that is easy to make and always a crowd-pleaser. With its creamy, tangy dressing and tender potatoes, it's the perfect dish to bring to any potluck or barbecue. So next time you're looking for a delicious and refreshing side dish, give this buttermilk ranch potato salad a try.
