Time 50m

Number Of Ingredients 10

2 large (3-4 lb. total) butternut squash
2 Tbsp canola oil
1 tsp chinese five-spice powder or pumpkin pie spice
5 apples, granny smith or mc intosh
1/3 c apple cider vinegar
1/3 c maple syrup
1/3 c raisins or currants
1/3 c pecans (optional)
1/4 tsp sea salt
fresh ground pepper to taste

Steps:

  • 1. Preheat oven to 400^. Peel, seed, and cut squash into cubes; place in a large bowl. Toss squash with canola oil and spice. Spread on a rimmed cookie sheet and bake for 20 minutes.
  • 2. Core apples, remove peels and cut into cubes. Place apple pieces in a large bowl. In a small bowl, combine vinegar and maple syrup; pour over apples.
  • 3. Combine apples with squash and toss gently. Return both to baking sheet, and bake 5-10 minutes until cooked through and tender. Remove apples and squash from oven and place in serving dish. Add raisins, pecans, salt and pepper, and serve.

Tips:

  • Choose the right butternut squash. Look for a squash that is firm and heavy for its size, with smooth, unblemished skin. Avoid squash with soft spots or blemishes.
  • Peel and cube the butternut squash. Use a sharp knife to peel the squash, then cut it in half lengthwise and scoop out the seeds. Cut the squash into 1-inch cubes.
  • Roast the butternut squash. Preheat your oven to 400 degrees Fahrenheit. Toss the squash cubes with olive oil and salt and pepper. Spread the squash in a single layer on a baking sheet and roast for 20-25 minutes, or until the squash is tender and slightly browned.
  • Choose the right apples. For this recipe, you'll want to use a firm, tart apple, such as a Granny Smith or Honeycrisp. Avoid soft, mealy apples, such as Red Delicious or McIntosh.
  • Peel and slice the apples. Peel the apples and cut them into 1/2-inch slices.
  • Make the streusel topping. In a medium bowl, combine the flour, sugar, oats, and salt. Add the butter and use your fingers to work it into the dry ingredients until the mixture resembles coarse crumbs.
  • Assemble the bake. In a large bowl, combine the roasted butternut squash, apples, maple syrup, cinnamon, nutmeg, and ginger. Pour the mixture into a 9x13 inch baking dish. Sprinkle the streusel topping evenly over the squash and apple mixture.
  • Bake the butternut squash apple bake. Bake the dish in the preheated oven for 30-35 minutes, or until the topping is golden brown and the squash and apples are tender.
  • Serve warm. Serve the butternut squash apple bake warm, with a dollop of whipped cream or ice cream, if desired.

With its sweet and savory flavor and crunchy streusel topping, this butternut squash apple bake is a delicious and comforting fall dish. It's perfect for a weeknight dinner or a special occasion. Plus, it's easy to make and can be tailored to your own taste preferences. So next time you're looking for a warm and comforting dish, give this butternut squash apple bake a try.
