BUTTERNUT POUND CAKE

I love this cake. Makes your whole house smell wonderful. If you can't find butternut flavoring, you can also use vanilla-butternut or a combination of vanilla, butter and any nut flavoring of your choice. It is important that you bake this cake in a cold oven - do not preheat!

Tips:

  • Choosing the right butternut squash: Opt for a medium-sized squash that feels heavy for its size. Look for one with a deep orange color and a smooth, unblemished skin.
  • Prepping the butternut squash: To easily peel the squash, microwave it for 2-3 minutes or until the skin is soft enough to peel off. Alternatively, you can roast it in the oven until tender.
  • Measuring the butternut squash puree: Make sure to pack the puree tightly into the measuring cup to get an accurate measurement.
  • Mixing the batter: To avoid overmixing the batter, mix the dry and wet ingredients separately before combining them. Mix just until the ingredients are combined to prevent a tough cake.
  • Baking the cake: For even baking, place the cake pan in the center of the oven. A toothpick inserted into the center of the cake should come out clean when the cake is done.
  • Cooling the cake: Let the cake cool in the pan for 10-15 minutes before transferring it to a wire rack to cool completely.
  • Storing the cake: Store the cake in an airtight container at room temperature for up to 3 days, or in the refrigerator for up to a week.

Conclusion:

With its moist, flavorful crumb and delightful aroma, this butternut squash bundt cake is a true crowd-pleaser. Perfect for fall gatherings or as a special treat, this cake is sure to impress your friends and family.
