No-Bake Marshmallow-Butterscotch-Chex Cookies image

This five ingredient dessert is easy to make and easy to eat. Try it with whichever Chex™ cereal you have on hand!

4 cups Chex™ cereal, any variety
1/2 cup lightly salted peanuts
2 cups miniature marshmallows
1 bag (11 oz) butterscotch chips
1/2 cup creamy peanut butter

Steps:

  • In large bowl, mix cereal, peanuts and marshmallows.
  • In medium microwavable bowl, microwave butterscotch chips and peanut butter uncovered on Medium to Medium-High (50 to 75%) in 1-minute increments, stirring after each minute, just until mixture is smooth and melted. This should take 3 to 4 minutes.
  • Pour over cereal mixture, using large wooden spoon to mix until cereal mixture is thoroughly coated. Drop by spoonfuls onto waxed or cooking parchment paper.
  • Let stand 15 to 20 minutes to set.

1-3/4 cups pecans, toasted
1-1/2 teaspoons kosher salt
1 can (14 ounces) sweetened condensed milk
1-1/2 cups unsweetened finely shredded coconut
1 package (3.4 ounces) instant butterscotch pudding mix
1/2 cup sugar
48 pecan halves, toasted

Steps:

  • Place 1-3/4 cups pecans and salt in a food processor; pulse until pecans are finely ground. Transfer to a large bowl. Stir in milk, coconut and pudding mix until blended. Refrigerate, covered, 30 minutes or until mixture is firm enough to roll., Shape mixture into forty-eight 1-in. balls; roll in sugar. Top each with a pecan half, flattening slightly. Store in airtight containers in the refrigerator.

1/2 cup margarine
2/3 cup evaporated milk
1 1/2 cups sugar
1 cup butterscotch chips
4 cups quick oatmeal (have used the other & it turns out just fine)

Steps:

  • Put margarine, evaporated milk, and sugar in a pot.
  • Heat and stir until boiling.
  • Boil 1 minute, stirring constantly.
  • Remove from heat.
  • Add butterscotch chips, stir well.
  • Add oatmeal and stir again.
  • Cool silghtly until mixture can be handled.
  • Drop onto greased cookie sheets.
  • Chill until firm.
  • Can be frozen for future use.

3/4 cup butter, cubed
1 can (5 ounces) evaporated milk
1 package (3.4 ounces) instant butterscotch pudding mix
3-1/2 cups old-fashioned oats
3/4 cup butterscotch chips
1/2 cup chopped pecans

Steps:

  • In a large saucepan, combine sugar, butter and milk. Bring to a boil; boil 1 minute. Remove from heat. Stir in pudding mix and oats until blended. Stir in chips and pecans. Drop by tablespoonfuls 1 in. apart onto parchment-lined baking sheets. Let stand until set.

3/4 cup butterscotch chips
3/4 cup creamy no-stir peanut butter
1 cup quick-cooking oats
1 1/4 cups unsweetened shredded coconut, divided
1/4 teaspoon kosher salt
2 ounces dark chocolate (optional)

Steps:

  • Heat butterscotch chips and peanut butter in a medium heatproof bowl set over a medium pot of barely simmering water (bottom of bowl should not touch water), stirring occasionally, or in short bursts in the microwave, stirring in between bursts, until butterscotch is melted and smooth. Add oats, 1 cup coconut, and salt; stir gently to combine.
  • Spoon mixture by the tablespoonful onto a parchment-lined sheet tray. Gently press balls in the center to flatten. Chill until set, about 10 minutes.
  • Heat chocolate, if using, in a medium heatproof bowl set over a medium pot of barely simmering water (bottom of bowl should not touch water), stirring occasionally, or in short bursts in the microwave, stirring in between bursts, until chocolate is melted and smooth. Steps:

  • Melt chips over double boiler.
  • Remove from heat.
  • Add marshmallows and noodles.
  • Stir to coat.
  • Drop by spoonfuls onto waxed paper.
  • Chill in fridge.
  • Store in airtight container in fridge.
