Time 35m

Number Of Ingredients 11

1 cup unsalted butter, softened (2 sticks)
3/4 cup white granulated sugar
3/4 cup light brown sugar, packed
2 large eggs
1 tsp vanilla extract
2 1/2 cups all-purpose flour
1/2 cup quick cooking oats
1 tsp baking soda
1/2 Tbsp salt
1 3/4 cups butterscotch chips
1 cup toffee chips (or toffee baking bits)

Steps:

  • 1. Preheat oven to 350°F. Line baking sheets with parchment paper or Silpat mat/baking liner; set aside.
  • 2. With electric mixer, cream butter and both sugars until fluffy. Beat in eggs and vanilla until well combined.
  • 3. In a medium-size mixing bowl, combine flour, oats, baking soda and salt. Slowly add the flour mixture to the creamed butter, mixing just until flour is well incorporated into cookie dough. Stir in the butterscotch chips and toffee bits until well blended. Chill dough about 20 minutes (chilling is optional - it helps cookies from spreading too much during baking).
  • 4. With a medium cookie scoop, drop dough onto prepared baking sheets about 1 1/2 to 2 inches apart. Bake 9 to 10 minutes or until lightly golden. Let cool 5 minutes on baking sheet before transferring cookies to a cooling rack.

Tips:

  • Use high-quality ingredients: The quality of your ingredients will directly impact the taste of your cookies. Use real butter, not margarine, and use good-quality chocolate chips.
  • Don't overmix the dough: Overmixing the dough will make the cookies tough. Mix just until the ingredients are combined.
  • Chill the dough before baking: Chilling the dough will help the cookies hold their shape and prevent them from spreading too much in the oven.
  • Bake the cookies at the right temperature: The ideal temperature for baking butterscotch toffee cookies is 350 degrees Fahrenheit. If you bake them at a higher temperature, they will brown too quickly and the centers will be undercooked.
  • Let the cookies cool completely before eating them: The cookies will continue to set as they cool, so it's important to let them cool completely before eating them. This will help them achieve the perfect texture.

Conclusion:

Butterscotch toffee cookies are a delicious and easy-to-make treat that are perfect for any occasion. With their chewy texture, buttery flavor, and toffee bits, these cookies are sure to be a hit with everyone who tries them. So next time you're looking for a sweet treat, give these cookies a try.
