1 cup buttermilk
4 sticks butter, plus 1 tablespoon, for pan
3 cups cake flour, plus 2 tablespoons, for pan
1 Granny Smith apple, peeled, cored and diced into 1/8-inch pieces
1/2 teaspoon ground cinnamon
1 teaspoon lemon juice
2 1/2 cups sugar, divided
1 teaspoon vanilla extract
1 teaspoon lemon extract
3 teaspoons baking powder
Special equipment: 10-inch Bundt cake pan

Steps:

  • Preheat oven to 325 degrees F. Let the eggs, milk and butter come to room temperature on the counter before beginning. (Butter goes on the counter last.)
  • Butter the Bundt pan with 1 tablespoon of butter, then add 2 tablespoons of flour and shake and tap to coat the interior of the pan; set aside. Put the diced apples in a bowl with the cinnamon and lemon juice. In a large bowl or stand mixer add the butter and 2 cups of sugar and beat until smooth. Add the egg yolks, 1 at a time, and blend to completely incorporate before adding the next. The mixture will become very light in color. Add the buttermilk and the extracts and mix to combine. Stir in 3 cups of flour along with the baking powder and stir until incorporated.
  • In a separate clean dry bowl, whisk egg whites until foamy, then add the remaining 1/2 cup of sugar and whisk until shiny and soft peaks form when removing the whisk from the whites. Gently fold this into the cake batter. Pour half of the batter into the prepared pan. Arrange the apples in the center of the ring all the way around, being sure they don't touch the outer or inner edge of the pan. Pour in the remaining batter and bake for 1 hour and 30 minutes. Remove the cake from the oven and cool completely. Put a large plate or cake plate on top of the pan, then holding both together, flip them so that the curved bottom of the Bundt pan is on the top and the plate is resting on a flat surface. Slowly remove the pan from the cake by lifting it straight up. Slice and serve.

•1/3 cup chopped pecans, toasted
•1 tsp. cinnamon
•1 tsp. ground nutmeg
•3/4 cup plus 2 Tbsp. butter, softened and divided
•1.5 cups sugar
•3 eggs
•3 cups all-purpose flour
•1.5 tsp. baking powder
•1.5 tsp. baking soda
•1/2 tsp. salt
•1.5 cups sour cream
•2 tsp. vanilla extract, divided
•1.5 cups apple, peeled, cored and thinly sliced
•2 Tbsp. milk

Steps:

  • Combine ⅓ cup brown sugar, pecans, cinnamon and nutmeg in a small bowl; set aside.
  • Beat ¾ cup butter at medium speed with an electric mixer until creamy. Gradually add 1.5 cups sugar, beating 5 to 7 minutes. Add eggs, one at a time, beating just until yellow disappears.
  • Combine flour, baking powder, baking soda and salt in another bowl. Add sour cream and flour mixture alternately to butter mixture, beginning and ending with flour mixture; beat at low speed after each addition just until mixture is blended. Stir in one teaspoon vanilla.
  • Spoon half of batter into a greased and floured 12-cup Bundt pan (I use a Nordic Ware Bundt). Arrange apple slices over batter, then spoon half of brown sugar mixture over apples; gently press into batter. Top with remaining batter, then sprinkle with remaining brown sugar mixture. Bake at 350° degrees for one hour or until a toothpick inserted in center comes out clean. Cool in pan on a wire rack 15 minutes; remove from pan and cool completely on wire rack.
  • Heat 2 tablespoons butter in a small saucepan over medium heat until butter starts to brown. Remove from heat and stir in remaining ½ cup brown sugar, milk and one teaspoon vanilla. Stir until smooth; drizzle glaze evenly over cake.

1½ teaspoons kosher salt
5 large eggs, room temperature
1 tablespoon vanilla extract
3 cups all-purpose flour
1 teaspoon ground cinnamon

Glaze (recipe follows)
½ cup unsalted butter
1 cup firmly packed light brown sugar
⅔ cup heavy cream
1 teaspoon vanilla extract

1½ cups confectioners' sugar, sifted

Steps:

  • Spray a 15-cup Bundt pan with baking spray with flour. Set aside.
  • In a medium bowl, stir together apple butter, ¼ cup brown sugar, and pecans. Set aside.
