BRAISED BEEF AND CABBAGE
When I wasn't looking, the butcher wrapped up a lump of meat that looked like a lawnmover had run over it. Lacking the language skills to try to complain or exchange it, I did this with it and my husband couldn't rave enough over how good it was!

Steps:
- Sprinkle the beef cubes (mine were pretty small, maybe 1/2") with salt and pepper and brown in batches in oil over medium-high heat. Be sure to leave enough space between the beef chunks so that they actually brown and don't steam/boil when they release their liquid.
- In the bottom of an oven proof lidded glass or ceramic baking dish (or a crockpot), layer onion and cabbage and top with beef. Repeat layering, finishing with beef.
- Open the tomatoes use them and the liquid with them to deglaze the pan in which the meat was browned. Break up the tomatoes while you do this.
- Pour contents of the pan over the layered meat, cabbage, and onions.
- Cover the pot and place in a slow oven (about 200-250 degrees F) for about 2 hours.
- Check meat for tenderness and serve or continue cooking until tender.
- Serve with sour cream or feta cheese.

Steps:
- Heat a large heavy pot or Dutch oven over medium. Add the bacon and cook until crisp, turning as needed, 5 to 6 minutes in all. Transfer to a plate lined with paper towels. Pour off all but 1 tablespoon of the fat from the pan, then return it to medium heat. Add the onion and saute for 5 minutes, or until golden brown. Add the cabbage and toss occasionally in the pot for 3 or 4 minutes, or until the cabbage begins to wilt and is well mixed with the onions. Pour in the beer and bring to a simmer over medium-high. Partially cover the pot, reduce the heat to medium-low, then simmer for 30 minutes, stirring occasionally, until the cabbage is tender and most of the liquid is evaporated. Crumble the reserved bacon and stir it into the cabbage. Serve hot or warm.

Steps:
- Heat oil in a large high-sided skillet over medium-high heat. Add bratwurst and cook, turning, until browned on all sides. Add onion and cook, stirring, until softened. Add beer, cabbage, and tomatoes; season with salt and pepper. Cover and cook until cabbage is tender, 10 to 15 minutes. Garnish with parsley and serve with cornbread.
Tips:
- Choose the right cabbage: Use a firm, heavy head of cabbage for braising. A green cabbage is the most common type used, but you can also use red or Savoy cabbage.
- Slice the cabbage thinly: This will help it cook evenly and absorb the flavors of the beer and other ingredients.
- Use a variety of beer: You can use any type of beer you like for braising cabbage, but a dark beer will give it a richer flavor. Some good options include stout, porter, or amber ale.
- Add aromatics: To enhance the flavor of the cabbage, add some aromatics to the pot, such as onions, garlic, celery, and carrots.
- Season to taste: Once the cabbage is cooked, season it to taste with salt, pepper, and other spices. You can also add a bit of vinegar or lemon juice to brighten the flavor.
- Serve immediately: Braised cabbage is best served immediately, while it is still hot and tender.
Conclusion:
Braised cabbage is a delicious and versatile dish that can be served as a side dish or main course. It is a great way to use up leftover cabbage, and it is also a budget-friendly meal. With its simple ingredients and easy preparation, braised cabbage is a great option for busy weeknight dinners.
