Time 4h28m

Yield 1 1/2 quarts, 6 serving(s)

Number Of Ingredients 7

2 cups whole milk
1/2 cup coffee beans, finely ground
2/3 cup sugar
5 egg yolks
1 cup heavy cream
whipped cream (to garnish) (optional)
chocolate-covered coffee beans (to garnish) (optional)

Steps:

  • Combine milk and ground coffee in a medium saucepan and bring to a low simmer.
  • Cook for 20 minutes.
  • After 20 minutes, remove the milk from the heat and let stand for 30 minutes (you can also refrigerate it overnight).
  • Strain the milk through a fine-meshed strainer.
  • Heat until bubbling, then cover to keep hot and remove from heat.
  • Blend sugar and egg yolks in a blender or food processor until thick and smooth.
  • Gradually add the hot milk until the mixture is combined.
  • Pour the mixture into a saucepan and cook over medium heat until the mixture thickens and will coat the back of a spoon (about 6-8 minutes; be sure to stir constantly).
  • Remove the pan from heat and place in a bowl of ice water; stir until mixture is cool (about 2 minutes).
  • Cover and refrigerate until the mixture is completely cool (probably at least 2 hours).
  • Whip the cream until soft peaks form and fold into cooled custard mixture.
  • Freeze in an ice-cream maker; for a silky texture, you should use less salt and a slower churning speed (fast, cold churning can make a gelato coarse).
  • Serve with whipped cream and chocolate-covered coffee beans for garnish.

Time 1h

Yield 1 cake, 10-12 serving(s)

Number Of Ingredients 12

150 g dark chocolate
150 g butter
6 eggs
250 g caster sugar
1 teaspoon vanilla extract
75 g plain flour
5 teaspoons instant espresso powder
4 tablespoons Tia Maria or 4 tablespoons other coffee liqueur
75 g white chocolate
375 ml double cream
2 teaspoons instant espresso powder
cocoa powder (for decoration)

Steps:

  • Take everything you need out of the fridge to bring to room temperature. Preheat the oven to 180°C
  • Butter and line a 23cm springform tin with baking parchment.
  • Melt the dark chocolate and butter and set aside to cool slightly.
  • Beat the eggs, sugar and vanilla together until thick, pale and fluffy - about 7 minutes. They should have at least doubled in volume, even tripled.
  • Gently fold the flour and espresso powder, taking care not to lose the air you have created, and finally add the melted chocolate and butter, folding gently again.
  • Pour into the prepared tin and cook for 35-40 minutes, by which time the top of the cake should be firm, and the underneath a bit gooey.
  • Let the cake to cool completely on a wire rack before releasing from the tin.
  • For the cream, melt the white chocolate, and let it cool. Fold in the cream and espresso powder, whipping the latte cream together to thicken it a little.
  • Sit the sprung cake on a plate, fill the middle sunken crater with the latte cream and dust with a little cocoa powder.

Tips:

  • Use fresh, high-quality coffee beans: The quality of your coffee beans will have a big impact on the taste of your latte. Choose beans that are fresh, roasted within the past two weeks, and have a good flavor profile.
  • Grind your coffee beans just before brewing: Grinding your coffee beans just before brewing will help to preserve their flavor and aroma. If you don't have a coffee grinder, you can ask your local coffee shop to grind your beans for you.
  • Use the right amount of coffee: The amount of coffee you use will depend on the size of your latte and your personal preference. A good starting point is to use 2 tablespoons of coffee for every 6 ounces of water.
  • Brew your coffee at the right temperature: The ideal brewing temperature for coffee is between 195 and 205 degrees Fahrenheit. If you brew your coffee at too low a temperature, it will be weak and flavorless. If you brew it at too high a temperature, it will be bitter.
  • Steam your milk properly: Steaming your milk is an essential step in making a latte. The steam will help to create a smooth, creamy texture and a layer of foam on top of your latte.
  • Use the right type of milk: The type of milk you use will also affect the taste of your latte. Whole milk will produce a richer, creamier latte, while skim milk will produce a lighter, less flavorful latte. You can also use alternative milks, such as almond milk or soy milk.

Conclusion:

Making a latte at home is a great way to enjoy a delicious, café-quality beverage without having to leave the house. By following these tips, you can make a latte that is perfect for your taste. Experiment with different types of coffee beans, milk, and flavorings to create your own signature latte. With a little practice, you'll be able to make a perfect latte every time.
