CAJUN CORN CASSEROLE
I got this recipe from a relative and do not know where they got it or when. To give it a little more "flair" you can add in a few shakes of Louisiana Hot Sauce. Add salt to suit your taste. Good, quick, and simple.

Tips:
- Fresh or frozen corn? If using fresh corn, remove the kernels from the cob using a sharp knife. If using frozen corn, thaw it overnight in the refrigerator or use the defrost setting on your microwave.
- Don't overcook the corn. The corn should be cooked just until it is tender-crisp. Overcooking will make the corn mushy.
- Use a variety of cheeses. Cheddar cheese is a classic, but you can also use Parmesan, mozzarella, or Monterey Jack cheese. If you are using a sharp cheddar cheese, you may want to reduce the amount of salt in the recipe or season to taste.
- Add some spice. A little bit of cayenne pepper or chili powder can add a nice kick of flavor to the casserole. If you are using fresh jalapeƱos, be sure to remove the seeds and ribs before chopping them.
- Top with your favorite toppings. Some popular toppings for corn casserole include crumbled bacon, chopped green onions, or diced tomatoes.
