1 1/4 cups Original Bisquick™ mix
1/4 cup butter or margarine, softened
2 tablespoons hot water
4 oz pepper Jack cheese, shredded
1 cup diced smoked spicy andouille sausage (about 6 oz)
1/3 cup thinly sliced green onions
1 cup half-and-half
1 1/2 teaspoons Cajun seasoning
3 eggs

Steps:

  • Heat oven to 400°F. Spray 9-inch glass pie plate with cooking spray.
  • In medium bowl, stir Bisquick mix and softened butter until mixed. (Mixture will be crumbly.) Add hot water; stir until soft dough forms. Press dough in bottom and up side of pie plate.
  • Layer cheese, sausage and green onions over crust in pie plate. In medium bowl, beat half-and-half, Cajun seasoning and eggs with whisk or fork until blended. Pour in pie plate.
  • Bake 32 to 38 minutes or until knife inserted in center comes out clean. Let stand 10 minutes before serving.

This recipe came from Cooking Light magazine, we aren't usually quiche fans but this was awsum! A tip: I like to put leftover cooked rice in the freezer, this way I always have precooked rice when I need it and I don't waste the leftovers. Also I add 1-2 tablespoons of Cajun seasoning to the egg mixture. Crust browns nicely! Hope you enjoy!

2 cups cooked white rice
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon salt
1 large egg, lightly beaten
cooking spray
1 ounce cheddar cheese, about 1/4 cup shredded
1/2 cup onion (I use sweet onions, diced)
1/2 cup celery, diced
1/2 cup red bell pepper, diced
1 teaspoon garlic, minced
3 ounces andouille sausages (about 2/3 cup) or 3 ounces kielbasa, chopped (about 2/3 cup)
3/4 cup egg substitute
2 large egg whites, lightly beaten
1/4 cup plain fat-free yogurt
1/4 teaspoon salt
1/4 teaspoon hot pepper sauce (such as Tobasco or Wing-It, to taste)
1 ounce cheddar cheese, about 1/4 cup shredded

Steps:

  • Preheat oven to 375.
  • Prechop onion, celery, red pepper, sausage (or kielbasa).
  • To prepare crust, combine first 5 ingredients in a bowl and mix well. Spread mixture into bottom and up sides of a 9-inch pie plate coated with cooking spray. Sprinkle crust evenly with 1/4 cup cheese.
  • To prepare filling, heat a medium nonstick skillet over medium-high heat. Coat pan with cooking spray. Add onion and next 4 ingredients, saute 5 minutes. Spoon into prepared crust.
  • In a separate bowl combine egg substitute and next 4 ingredients, stir with a whisk until well blended. Pour egg mixture over veggie and sausage mixture in rice crust. Sprinkle with 1/4 cup cheese.
  • Bake at 375 for 30 minutes or until center is set. Let stand 5 minutes before serving.

2 tablespoons vegetable oil
1 large onion, chopped
1 tablespoon creole seasoning
2 (11 ounce) cans mexicorn, undrained
8 ounces monterey jack cheese, shredded
1 cup buttermilk baking mix
2 eggs
3/4 cup water

Steps:

  • Preheat oven to 375°F Lightly grease 10-inch pie plate.
  • In large skillet over medium-high heat, heat oil. Add onion; sauté about 5 minutes or until translucent. Stir in turkey; season with Creole seasoning. Cook 3 to 5 minutes until turkey is browned, stirring often. Stir in Mexicorn, with its liquid, and cheese.
  • In medium bowl, combine baking mix, eggs and water; mix well.

1 pillsbury refrigerated pie crust
1 c monterey jack cheese or pepper jack cheese, shredded
8 oz andouille sausage, sliced and cut into quarters
2 green onions, thinly sliced
3 eggs
1 1/2 c heavy cream or half and half
1 1/2 tsp cajun seasoning (i use tony cachere's)

Steps:

  • 1. Roll piecrust into a 9" pie pan (you can use your own homemade crust if desired). Prick bottom of crust with a fork. Line pie plate with aluminum foil and bake in a 350 degree oven for 15-20 minutes. Allow crust to cool before adding other ingredients.
  • 2. Sprinkle cheese over bottom of crust and add andouille sausage and green onions.
  • 3. Whisk eggs, cream or half and half, and cajun seasoning in a medium bowl until well combined. Pour into pie plate.
  • 4. Bake at 400 degrees for 40 minutes. Allow to sit for 10 minutes before slicing and serving. Quiche can also be refrigerated overnight and baked in the morning.
