1 tablespoon extra-virgin olive oil
2 slices bacon, chopped
1 onion, chopped
1 teaspoon tomato paste
3 tablespoons all-purpose flour
3 cups low-sodium chicken broth
2 cups milk or half-and-half
1 pound red-skinned potatoes, diced
12 ounces medium shrimp, peeled and deveined, tails removed
Kosher salt and freshly ground pepper
1/2 cup loosely packed fresh basil, torn into pieces

  • Heat the oil in a large wide pot or medium Dutch oven over medium heat. Add the bacon and cook, stirring occasionally until crisp, about 5 minutes. Add the onion and cook, stirring, until soft, about 3 minutes. Add the tomato paste and stir until toasted, about 30 seconds. • Pour in the broth and milk, stirring until the mixture is smooth. Add the potatoes and season with salt and a generous grinding of pepper. Bring to a boil, then reduce the heat to medium-low, and simmer, covered, until the potatoes are tender, about 15 minutes.

Tips:

- **Fresh is best:** Use fresh shrimp for the best flavor. If you can't find fresh shrimp, frozen shrimp is a good substitute. Just be sure to thaw them completely before using. - **Don't overcook the shrimp:** Shrimp cooks quickly, so be careful not to overcook it. Otherwise, it will become tough and rubbery. - **Use good quality potatoes:** The type of potatoes you use will affect the flavor and texture of the chowder. Yukon Gold potatoes are a good choice because they are creamy and hold their shape well. - **Don't skimp on the vegetables:** Vegetables add flavor and nutrition to the chowder. Be sure to use a variety of vegetables, such as celery, carrots, and onions. - **Season to taste:** The amount of salt and pepper you add to the chowder is a matter of personal preference. Be sure to taste the chowder before serving and adjust the seasonings as needed.

Conclusion:

Cajun shrimp potato chowder is a delicious and easy-to-make dish that is perfect for a cold night. It is also a great way to use up leftover shrimp. This chowder is creamy, flavorful, and packed with vegetables. It is sure to be a hit with your family and friends.
