Tips:

  • Choose the right squash: Use a variety of squash that is firm and has a deep color. Zucchini, yellow squash, and pattypan squash are all good choices.
  • Cook the squash properly: Overcooking the squash will make it mushy. Sauté it over medium heat until it is tender but still slightly crisp.
  • Use fresh corn: Fresh corn on the cob is best, but you can also use frozen or canned corn.
  • Add some spice: If you like spicy food, add some chili peppers or cayenne pepper to the dish.
  • Serve with a dollop of sour cream or yogurt: This will help to balance out the flavors of the dish.

Conclusion:

Calabacitas is a delicious and versatile dish that can be enjoyed for breakfast, lunch, or dinner. It is a great way to use up leftover squash and corn, and it is also a healthy and affordable meal. So next time you are looking for a quick and easy recipe, give calabacitas a try!
