2 cups sliced yellow summer squash (1/4 inch thick)
1 cup sliced zucchini (1/4 inch thick)
1 medium onion, chopped
1/4 cup sliced green onions
1 cup water
1 teaspoon salt, divided
2 cups crushed butter-flavored crackers
1/2 cup butter, melted
1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
1 can (8 ounces) sliced water chestnuts, drained
1 large carrot, shredded
1/2 cup mayonnaise
1 jar (2 ounces) diced pimientos, drained
1 teaspoon rubbed sage
1/2 teaspoon white pepper
1 cup shredded sharp cheddar cheese

Steps:

  • In a large saucepan, combine the first five ingredients; add 1/2 teaspoon salt. Cover and cook until squash is tender, about 6 minutes. 6 medium squash (2 1/2-inch)
2 tablespoons butter
1 egg, beaten
1 small onion, finely chopped
1/2 teaspoon salt
1/2 teaspoon pepper
1 tablespoon sugar
1 cup cornbread, crumbs
1/2 cup shredded cheddar cheese

Steps:

  • Wash squash and cut into 1" slices. In saucepan cover with water and cook until tender.
  • Drain well and mash slightly.
  • Add butter, egg, onion, salt, pepper, sugar and bread crumbs.
  • Mix together well.
  • Put in greased casserole dish.

  • Combine first 3 ingredients in a medium saucepan; bring to a boil. Cover, reduce heat, and simmer 8 minutes or until squash is just tender. Drain and set aside. Sauté onion, green pepper, and green onions in 1 tablespoon butter until tender; set aside. Combine stuffing mix and remaining 3 tablespoons butter in a large bowl; reserve ⅓ cup mixture. ½ cup melted butter
1 (10.75 ounce) can condensed cream of mushroom soup
1 (8 ounce) can sliced water chestnuts, drained
1 large carrot, shredded
½ cup mayonnaise
½ (4 ounce) jar diced pimento peppers, drained
1 teaspoon sage
½ teaspoon white pepper
1 cup shredded sharp Cheddar cheese
