3/4 cup olive oil
2 cups onion
4 cups celery
3/4 cup flour
12 cups clam juice
3 cups red bell pepper
3 cups carrot
3 pounds minced clams
3 cups tomato concasse
1 teaspoon red pepper flakes
3 pounds potato
1 teaspoon thyme
1 teaspoon oregano
6 cups half and half
1/2 teaspoon salt

Steps:

  • Heat olive oil in a stockpot, over a medium flame. Add onions and half of the celery heat and stir for 5-6 minutes. Whisk in flour, heat and stir for 5 minutes, until blonde. Stir in clam juice, heat and stir until thickened. Add remaining celery, bell peppers, carrots, clams in juice, tomatoes, and red pepper flakes bring to a boil, reduce heat, and simmer for 30 minutes. Add potatoes, thyme, and oregano, and simmer for another 30 minutes. Remove from heat and stir in half and half or milk. Season to taste with salt and white pepper serve hot.

64 oz chopped clams, clam juice reserved (If using fresh clams, 8 cups)
40 oz Half and Half
10 oz chopped no nitrate uncured applewood smoked bacon
4 oz unsalted butter (one stick)
7 oz all-purpose flour
1 medium onion minced
2 garlic cloves minced
9 cups diced red potatoes with skin
1 tsp salt
1/2 tsp white pepper

Steps:

  • Drain clams and reserve clam juice. Slice bacon and cook in pan on medium heat until just done. Remove bacon and half of bacon grease.
  • Chop potatoes, celery, onion and garlic. Add chopped potatoes to (bacon) pan and cook on medium heat until potatoes are just tender...about 15 minutes.
  • Pour removed half of bacon grease into large soup pot and saute onion, garlic and celery, until translucent, about 10 minutes.
  • On low heat in small pot, melt the butter then add the flour slowly and with a high heat spatula and stir until smooth to create the roux.
  • Stir in flour roux, the half and half, the clam juice, salt and pepper to the vegetables in the large soup pot. Stir well. Add clams and bacon. Reduce heat and simmer on low heat for 30 minutes.

1 cup flour
4 tablespoons unsalted butter
2 tablespoons minced garlic
4 cups chopped celery
4 cups chopped white onions

4 cups peeled, diced potatoes
6 cups chopped clams, high quality
1 cup cooked, crumbled bacon
1 cup heavy cream
1/4 cup fresh, chopped thyme

Steps:

  • In a small pot, melt the butter over medium-low heat. Once the butter is melted, slowly mix in the flour until you have a thick consistency. Set aside and keep warm until ready to use. This is the roux.
  • In a 3-gallon stock pot, melt 4 tablespoons of butter. Once the butter is melted, add the garlic, celery, and onions along with the bay leaves, salt, and white pepper. Cook the mixture until it is lightly browned, stirring it occasionally. Add the clam juice, stir, and let it cook until it is moderately warm. Then add the potatoes and bring the chowder to a boil, stirring it occasionally. Once the soup is boiling add the chopped clams, bacon, cream, and thyme. Stir the soup and let it cook until hot, do not bring it to a boil. Remove the soup from the heat and slowly stir in the roux until the desired consistency is reached.

Steps:

  • Place diced bacon in large saucepan with the butter. Cook on medium heat until almost crisp; add onions, and cook 5 minutes. When onions are translucent, stir in water, clam juice and potatoes, and season with salt and pepper. Bring to a boil, and cook uncovered until the liquid has reduced by half. 1 cup minced onion
1 cup diced celery
2 cups cubed potatoes

¾ cup butter

2 cups half-and-half

1 lb clam, chopped (fresh, frozen, or canned)

Steps:

  • Place vegetables, bacon and margarine in a 5 quart sauce pot.
  • Saute over medium heat until vegetables are tender. Be careful not to brown or scorch.
  • When vegetables are tender, add flour to make a roux.
  • Cook for two minutes, allowing flour to cook while stirring occasionally.

2 6 1/2-ounce cans chopped clams, drained, juices reserved
1 cup water
1 cup half and half

  • Sauté bacon in heavy large Dutch oven over medium heat until light brown and most of the fat is rendered. Drain off all but 2 tablespoons fat.
