CALIFORNIA COLESLAW
I got this recipe from a diabetic cooking class I took. To me this is a very yummy coleslaw. I didn't even really like coleslaw until I had tried this recipe. The recipe calls for liquid sugar substitute to equal 1/4 cup sugar. We used 8 packets of Splenda during the cooking class.

Steps:
- 1. Break the uncooked Ramen noodles into bite-sized pieces. Reserve the seasoning packet for the dressing. Toss noodles together with the cabbage, chicken, and salad ingredients in a large mixing bowl. Set aside.
- 2. In a pint jar, combine dressing ingredients. Shake well. Pour over salad ingredients and stir well. Taste for salt and add if needed. The Ramen seasoning packet is usually quite enough salt for us.
- 3. Refrigerate until serving time. Best prepared about 4 hours ahead as it gives the flavors time to blend. Refrigerate any leftovers.
Tips:
- For a creamy coleslaw, use mayonnaise-based dressing. For a lighter coleslaw, use a vinegar-based dressing.
- To add sweetness to your coleslaw, add some shredded carrots or apples.
- To add crunch to your coleslaw, add some chopped nuts or seeds.
- For a more flavorful coleslaw, use a variety of cabbages and other vegetables, such as broccoli, cauliflower, or Brussels sprouts.
- Be sure to chill your coleslaw for at least 30 minutes before serving to allow the flavors to meld.
Conclusion:
California coleslaw is a delicious and versatile side dish that can be enjoyed with a variety of meals. With its light and refreshing flavor, it's the perfect dish for a summer cookout or picnic. Whether you prefer a creamy or vinegar-based dressing, or you like to add your own unique twist, there's a California coleslaw recipe out there that's perfect for you.
