This is one of my favorite Mexican shrimp meals to make. Everyone gobbles it up. Best served with rice, about 3 to 4 cups cooked. I like to sprinkle mine with Cojita cheese and cilantro also.

2 tablespoons butter
½ red bell pepper, diced
½ green bell pepper, diced
½ sweet onion, chopped
2 cloves garlic, diced, or more to taste
1 cup chicken broth
1 (7 ounce) can chopped green chilies
1 (8 ounce) package cream cheese, softened
3 tablespoons Mexican crema
2 teaspoons ground dried chile de arbol peppers, or to taste
½ teaspoon ground cumin
½ teaspoon dried Mexican oregano
1 ½ pounds uncooked medium shrimp, peeled and deveined

Steps:

  • Melt butter in a skillet over medium-high heat. Place bell peppers, onion, and garlic in the butter and saute until tender and onion is translucent, 5 to 7 minutes. Remove and set aside. Save pan and juices and keep warm.

1 envase (8 oz) de queso crema untable PHILADELPHIA Cream Cheese Spread
1/4 taza de leche
1 cucharadita de cáscara rallada y 2 cdas. del jugo de 1 limón amarillo (lemon)
1/2 cucharadita de ajo en polvo
1/4 cucharadita de pimienta negra
1/4 libra de pasta fetuchini, sin cocer
1 taza de floretes de brócoli pequeños
3/4 libra de camarones medianos limpios, cocidos y congelados
1 diente de ajo, bien picado
1/4 taza de tomates (jitomates) picados

Steps:

  • Mezcla bien el queso crema untable con la leche, la cáscara rallada, el jugo del limón y los sazones.
  • Cuece la pasta en una olla grande como se indica en el paquete, pero omite la sal y añade el brócoli al agua hirviendo durante los últimos 3 min. de cocción. Escúrrela y tápala para mantenerla caliente.
  • Cocina los camarones con el ajo en una sartén grande antiadherente a fuego medio de 2 a 3 min. o hasta que los camarones estén completamente calientes. Añade la mezcla de queso crema; cocina todo revolviendo durante 2 a 3 min. o hasta que esté bien caliente.

1 tablespoon Italian dressing
1/2 red pepper, chopped
