This is a different way of serving chicken. It goes over well at dinner parties, but is equally suited to a romantic evening. I think it originally came from a Valentines Day special. I have included the refrigeration time in the prep. Some roasted asparagus and new potatoes and you have a complete meal.

2 chicken breasts
100 g camembert cheese or 100 g brie cheese
1/4 cup seasoned plain flour
1 egg, beaten
1/2 cup fresh breadcrumb
1/4 cup crushed macadamia nuts
olive oil flavored cooking spray

Steps:

  • Cut a pocket in the thick part of the chicken breasts.
  • Stuff with the cheese.
  • Season the flour with salt and pepper.
  • Coat chicken in flour, being careful with the stuffing.
  • Then in egg.
  • Then in the combined crumbs and nuts.
  • Ensure that it is well coated.
  • Cover and refrigerate for at least half an hour.
  • Preheat oven to 200C.
  • Line a tray with baking paper and place chicken on it.
  • Spray with olive oil spray or lightly drizzle with oil.
  • Bake for 15mins.
  • Turn over and cook a further 5 mins.

125 g camembert cheese
1 sprig marjoram
1 sprig parsley
1 sprig rosemary
1 sprig thyme
1 whole chicken (large)
1/2 cup white wine

Steps:

  • Preheat oven to 180dc. Stuff chicken with cheese and herbs.
  • Place chicken onto a wire rack in a roasting pan. Roast for 1 1/2 hours or until juice run clear when the thickest part of the chicken thigh is pierced with a skewer.
  • Remove chicken to a serving platter and cover to keep warm.
  • Transfer pan juices to a container and chill in the freezer for 3 minutes. Use a large metal spoon to skim fat from juicse.
  • Place roasting pan onto stovetop and heat over medium heat. Add wine to pan and bring to the boil, scraping base of pan. Pour in reserved pan juices and cook until headed. Pour mixture over chicken.
  • Serve slices of chicken with potatoes and steamed vegetables.

If you have a hot date or an important business meeting later on, this dish is best avoided. If, however, your calendar is free for the rest of the day, then Camembert and roasted garlic is a most pleasurable snack.

2 bulbs of garlic, unpeeled with the tops sliced off
3 tbsp/1 1/2 oz/40g butter
Scant 1/3 cup/3fl oz/80ml extra-virgin olive oil
Salt and freshly ground black pepper
1 squidge of honey
2 fresh rosemary sprigs
3 bay leaves
7 to 9oz/200 to 250g Camembert, plastic wrapping and lid removed but still in its wooden box, at room temperature
1 French baguette, ripped into 4in/10cm pieces and sliced horizontally

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Place the garlic cut side down in a large roasting pan. Add the butter, oil, a pinch of salt, a couple of twists of black pepper, the honey, rosemary, and bay leaves and bake in the oven for 40 to 45 minutes. After 30 to 35 minutes, put a large cross in the top of the Camembert and add it to the oven. Make sure the plastic covering and lid is removed, but it is still in its cardboard box. Add the French baguette to warm up too.
  • Once the garlic is soft, the bread is extra crunchy, and the cheese is all soft and gooey, remove from the oven.
  • Serve everything on a big sharing plate. Break off a piece of crusty bread, then squeeze out the tender flesh of the garlic along with a healthy dose of cheese and smear it liberally over the bread.
  • Serve with a chutney or relish and a good glass of red wine.

1 (8 ounce) round Camembert cheese in wooden box
1 clove garlic, sliced, or more to taste
1 sprig fresh rosemary, leaves stripped
2 sprigs fresh thyme, leaves stripped
1 tablespoon olive oil
freshly cracked salt and pepper to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Remove Camembert from wooden box and remove and discard any plastic wrapping. Place wheel of cheese back into the wooden box.
  • Using a sharp knife, score the top of the cheese in a crisscross pattern about 1-inch deep. If desired, remove the top rind.
  • Press garlic slices into the scores. Sprinkle with rosemary and thyme leaves, pushing a few into the scores. Drizzle top of Camembert cheese with olive oil and season with freshly cracked salt and pepper. Wrap box with foil to prevent drips (leaving the top open) and place on a baking sheet.
  • Bake in the preheated oven for 15 minutes. Remove from the oven and remove the foil. Serve the cheese in its box immediately.
