Tips for Marinating Potatoes Overnight:

  • Choose the right type of potato: Waxy potatoes, such as Yukon Gold or Red Bliss, hold their shape better than starchy potatoes, such as Russet, when marinated.
  • Cut the potatoes into uniform pieces: This will help them cook evenly.
  • Use a flavorful marinade: The marinade should contain a combination of acidic (such as lemon juice or vinegar), oily (such as olive oil or melted butter), and flavorful ingredients (such as herbs, spices, or garlic).
  • Marinating time: Marinate the potatoes for at least 30 minutes, but no longer than 24 hours.
  • Cook the potatoes thoroughly: Whether you are grilling, roasting, or baking the potatoes, make sure they are cooked through before serving.
