1 pound dry beans (navy, great Northern...) (2-1/3 cups)
water for soaking and precooking
1 medium onion
¼ cup pure maple syrup
⅓ cup brown sugar
2 tablespoons unsulfured molasses
2 tablespoons tomato paste (in a pinch I have substituted with ketchup)
2 teaspoons dry mustard
3 cups water (for cooking)
1 teaspoon salt
pepper to taste

Steps:

  • Rinse and sort the beans; remove any pebbles or debris.
  • Place the beans in a large bowl.
  • Fill with water to submerge the beans with at least two inches of water.
  • Soak overnight (8-12 hours).
  • The next day, transfer the drained and rinsed beans again to a large pot.
  • Re-fill with water and bring to a boil.
  • Turn down the heat and simmer for about 45 minutes.
  • Remove from heat and rinse again.
  • Transfer the rinsed precooked beans to your slow cooker.
  • Add the rest of the ingredients, stir together and place the whole onion in the center.
  • Cover and cook on low heat for 6 to 8 hours or until the beans are tender. If the mixture appears dry, you can add some water.

I like to leave the onion whole and take it out after (cut it up and eat seperate). Great served with hunks of rustic bread and pork chops. Make lots of it and you can take it for lunches. I'm going to freeze the leftovers flat in bags but because they are salted I'll use them up within a months time. Preparation time is not including overnight soak

1 lb small white pea beans
1 whole onion
1 teaspoon dry mustard
1 teaspoon summer savory
1 teaspoon ground black pepper
4 teaspoons chili powder

  • Soak beans overnight to cut down on cooking time. Drain and place in a 4 quart bean pot.

  • Pour the beans onto a plate, and pick-over looking for bad beans, or stones. Place beans in bowl, cover with water by at least 2 inches, and soak overnight.
  • Preheat oven to 250 degrees F.
  • Drain beans and place in 4-quart bean pot. Add onion, dry mustard, pepper, salt, and maple syrup. Add water to cover. Cut salt pork into 1-inch pieces and place on top of beans. 1 medium onion, chopped
1/2 cup salt pork, finely diced (or bacon)
2 tablespoons vinegar
1/2-1 teaspoon salt, to taste
1/4 cup mild flavoured molasses
1/4 cup ketchup
1/2 teaspoon dry mustard
1 tablespoon brown sugar
pepper, to taste

Steps:

  • Soak beans in cold water to cover them overnight; DO NOT DRAIN.
  • Place beans, and water in which they were soaked, in saucepan and simmer for 1/2 hour.

1 pound dried navy or great northern beans
2 tablespoons brown sugar
2 teaspoons salt
1/4 teaspoon freshly ground black pepper
2 tablespoons spicy brown mustard
2 tablespoons molasses
1/4 cup ketchup

2 thick strips bacon
