Tips:

  • Choose firm and evenly sized yams for a uniform cook.
  • Prick the yams with a fork before baking to allow steam to escape and ensure even cooking.
  • Bake the yams until tender but not mushy. The ideal internal temperature is 210°F (99°C).
  • Let the yams cool slightly before handling to prevent them from breaking apart.
  • Use a food processor or blender to puree the yams smoothly. This will help create a light and fluffy souffle.
  • Beat the egg whites until stiff peaks form. This will help incorporate air into the souffle, making it light and airy.
  • Gently fold the egg whites into the yam puree until just combined. Overmixing will deflate the egg whites and result in a dense souffle.
  • Pour the souffle mixture into a buttered baking dish and bake until puffed and golden brown.
  • Serve the souffle immediately with your favorite toppings, such as maple syrup, whipped cream, or fruit.

Conclusion:

Candied yam souffle is a delicious and elegant side dish that is perfect for special occasions. It is easy to make and can be tailored to your own taste preferences.
