Steps:
- Place 2 cloves and basil to each canning jar. Pack each jar with beans and fill with hot water to 1/4 of an inch from the top. Place hot lids and rings on.
- Process in your canner for 25 minutes at 10 pounds of pressure. Allow canner to cool and place jars on 2 thick towels out of a draft.
Tips:
- Choose fresh, tender wax beans: Look for beans that are bright green in color and have no blemishes. Avoid beans that are wilted or have brown spots.
- Blanch the beans before canning: Blanching helps to preserve the color and flavor of the beans and also makes them easier to pack into jars. To blanch the beans, bring a large pot of water to a boil and add the beans. Boil for 2-3 minutes, then drain the beans and immediately plunge them into a bowl of ice water. Once the beans are cool, drain them well.
- Use a flavorful brine: The brine is what gives the beans their flavor, so it's important to use a flavorful one. The recipe in the article uses a brine made with water, vinegar, sugar, salt, garlic, and basil. You can also add other herbs and spices to the brine, such as thyme, rosemary, or peppercorns.
- Pack the beans tightly into jars: When packing the beans into jars, pack them tightly so that there is no air space between the beans. This will help to prevent the beans from floating in the brine and also help to keep them crisp.
- Process the jars in a boiling water bath: Processing the jars in a boiling water bath is essential for ensuring that the beans are safe to eat. To process the jars, place them in a large pot of boiling water and bring the water back to a boil. Boil the jars for the amount of time specified in the recipe. Once the processing time is complete, remove the jars from the water and let them cool completely.
Conclusion:
Canning wax beans is a great way to preserve this delicious and versatile vegetable. Canned wax beans can be used in a variety of dishes, such as salads, soups, stews, and casseroles. They can also be pickled or frozen. With a little planning and effort, you can enjoy canned wax beans all year long.
