5 CAN CASSEROLE

5 Can Casserole image

I adopted this recipe from the Recipezaar account in February 2005. The next time I try it, I am going to try a smaller can of milk and try adding a 10 ounce package of frozen mixed vegetable. If I like it that way, they will become an optional ingredient. I have added can sizes, since the original recipe did not specify sizes. The casserole was soupy, which was not bad, but I want to see how it is with the smaller amount of milk.

Time 30m

Yield 6-8 serving(s)

Number Of Ingredients 7

1 (3 ounce) can chow mein noodles
1 (9 3/4 ounce) can chicken breasts
1 (12 ounce) can evaporated milk
1 (10 1/2 ounce) can cream of chicken soup
1 (10 1/2 ounce) can chicken and rice soup
1/4 cup onion, finely chopped (optional)
2 tablespoons lemon juice (optional)

Steps:

  • Drain canned chicken, then place in 1 1/2 quart casserole dish and break apart with a fork.
  • Add the rest of the ingredients and mix together well.
  • Bake at 350 degrees Fahrenheit for 25 minutes or so until lightly browned

Tips:

  • Use quality canned chicken: Choose canned chicken that is packed in water, not broth, to control the sodium content in your casserole. Look for brands that use organic, free-range chickens for a healthier option.
  • Enhance the flavor: Before adding the canned chicken to the casserole, sauté it in a pan with some olive oil, diced onion, and minced garlic to add extra flavor.
  • Choose your vegetables wisely: Select vegetables that cook evenly and hold their shape well in the casserole, such as carrots, celery, peas, and corn. For a more hearty casserole, include diced potatoes or sweet potatoes.
  • Use a creamy sauce: A creamy sauce is a classic choice for chicken casserole. You can make a simple sauce using cream of chicken soup, milk, and flour, or get creative with different ingredients like sour cream, Greek yogurt, or Alfredo sauce.
  • Add some crunch: Top the casserole with a crispy topping like crushed crackers, bread crumbs, or shredded cheese before baking. This will add texture and golden brown color to the dish.
  • Don't overcook the casserole: Keep an eye on the casserole during baking to prevent it from overcooking. The chicken should be heated through and the vegetables should be tender but still slightly firm.

Conclusion:

Canned chicken casserole is a versatile and budget-friendly dish that can be easily customized to your liking. With a few simple ingredients and some creative variations, you can create a delicious and comforting casserole that the whole family will enjoy. Whether you're looking for a quick weeknight meal or a hearty dish to serve at a potluck, canned chicken casserole is sure to be a hit.
