Provided by Hazel Roddy

Categories     Side Dish

Time 20m

Number Of Ingredients 3

1 pound (16 ounces) green beans or haricots verts
2 teaspoons extra-virgin olive oil
Scant ¼ teaspoon fine sea salt

Steps:

  • Preheat the oven to 425°F and prepare a large, rimmed baking sheet with parchment paper to make cleanup easier.
  • Green beans should be washed and the rough ends trimmed. Using clean tea towels, pat them dry thoroughly (wet green beans turn soggy in the oven).
  • Place the green beans on a baking sheet that has been sprayed with cooking spray. Drizzle the olive oil over the beans and season with salt to taste. Toss with your hands until all of the beans are lightly coated in oil. Arrange the green beans in a single layer across the pan.
  • Unstirred, roast for 14 to 16 minutes, or until crisp-tender with some golden, caramelized areas. (If using skinny haricots verts, they may be ready a few minutes sooner.)
  • Transfer to a serving dish and serve with any desired garnishes (see recipe notes for seasoning suggestions). Roasted green beans are best served warm, but they can be stored in the refrigerator, covered, for 4 to 5 days.

Tips:

  • Choose high-quality canned green beans. Look for brands that use fresh, young beans and pack them in a BPA-free can.
  • Rinse the green beans thoroughly before using them. This will remove the excess salt and help to improve the flavor.
  • Add aromatics to the green beans while they are cooking. This can include garlic, onion, shallots, celery, carrots, or herbs like thyme or rosemary.
  • Sauté the green beans in a little bit of olive oil or butter before serving. This will help to brown them and give them a more flavorful crust.
  • Add a splash of acid to the green beans. This can include lemon juice, vinegar, or white wine. The acid will help to brighten the flavor of the beans.
  • Season the green beans with salt and pepper to taste. You can also add other spices, such as garlic powder, onion powder, or paprika.
  • Serve the green beans immediately or store them in the refrigerator for up to 3 days.

Conclusion:

Canned green beans are a convenient and affordable way to get your daily dose of vegetables. However, they can often taste bland and mushy. By following these tips, you can transform canned green beans into a delicious and flavorful side dish that the whole family will enjoy.
