3 cups ketchup
2 tablespoons Worcestershire sauce
1/2 teaspoon garlic powder
1 1/2 tablespoons molasses
3/4 cup brown sugar
2 teaspoons salt
1 pinch cayenne pepper
2 teaspoons cider vinegar
3/4 cup water
1/4 cup honey
2 tablespoons orange juice
1/2 teaspoon black pepper

Steps:

  • Combine all ingredients in a saucepan and bring to a simmer. Simmer for 30 minutes.
  • Remove from heat and cool completely.
  • Refrigerate until ready to use.

Barbecue Sauce 2 tablespoons diced white
1 1/2 cups ketchup onion
6 tablespoons brown sugar 1 tablespoon olive oil
6 tablespoons water 1 pound ground beef
2 tablespoons honey 1 pound ground pork
1 tablespoon orange juice 1 egg
1 tablespoon Worcestershire sauce 1/4 cup breadcrumbs
2 1/4 teaspoons molasses 1 1/2 teaspoons chopped
1 teaspoon cider vinegar fresh parsley
3/4 teaspoon salt 1/2 teaspoon chopped fresh
1/4 teaspoon garlic salt thyme or pinch of dried
1/4 teaspoon ground pepper 1/2 teaspoons of chopped
Pinch cayenne pepper fresh sage or a pinch
of dried
2 11/4 teaspoons of minced
garlic
2 1/4 teaspoons heavy
cream
3/4 teaspoon Worcestershire
sauce
1 teaspoon salt
1 teaspoon ground pepper
Meatloaf
2 cups sliced or chopped mushrooms

Steps:

  • To make barbecue sauce: Combine all ingredients in a small saucepan. Simmer over low heat 10 to 20 minutes. Cool To make meatloaf: Preheat oven to 350 degrees. Saute mushrooms and onion in oil until tender. Remove from heat. In a large bowl, combine meats,egg,crumbs,herbs,garlic and cream. Mix well. Add mushrooms mixture. Add 2 tablespoons Worcestershire sauce,salt and pepper.Mix well. Press mixture firmly into a loaf pan. Cover with foil.Bake 1 to 1 1/2 hours. Uncover. Coat with remaining barnecue sauce. Bake uncovered 15 minutes. Use turkey baster to remove excess fat. Cut into slices and serve

2 cups sliced shiitake mushrooms
2 tablespoons diced white onions
1 tablespoon olive oil
1 lb ground beef
4 ounces ground veal (optional)
10 ounces ground pork
1 egg
3/4 cup breadcrumbs
1 1/2 teaspoons chopped fresh parsley
1/2 teaspoon chopped fresh thyme
1/2 teaspoon chopped fresh sage
2 1/4 teaspoons minced garlic
2 1/4 teaspoons heavy cream
3/4 teaspoon Worcestershire sauce
1 teaspoon salt
1 teaspoon pepper
2 tablespoons barbecue sauce (any will do, but Cap City Barbecue Sauce is recommended)

Steps:

  • Heat oven to 325 degrees.
  • In skillet, saute mushrooms and onions in olive oil until tender. Set aside.
  • In large bowl, combine meats, egg, bread crumbs, herbs, garlic, and cream. Mix well.
  • Add mushroom and onions. Add 2 TB of barbecue sauce. Add remaining ingredients; mix thoroughly.
  • Place mixture in a loaf pan, pushing down firmly to pack meat into place. Cover with foil. Bake for 50-60 minutes.
  • (Optional) Remove foil; cover meatloaf with desired amount of barbecue sauce. Cook uncovered for an additional 10-15 minutes. Serve with barbecue sauce.

APPLE CITY BARBECUE SAUCE

This is an award winning sauce that is very different and flavorfull. The more you eat of this sauce, the more you crave it. This is actually a sauce from the Apple City BBQ team I found, but have a couple of suggestions that are helpful when making this sauce.

1 cup ketchup
2/3 cup seasoned rice vinegar
1/2 cup apple juice or 1/2 cup apple cider
1/4 cup apple cider vinegar
1/2 cup brown sugar (I use dark)
1/4 cup Worcestershire sauce
2 teaspoons prepared yellow mustard
3/4 teaspoon garlic powder
1/4 teaspoon white pepper
1/4 teaspoon cayenne pepper
1/3 cup bacon bits (ground fried real bacon)
1/3 cup grated apple
1/3 cup chopped onion
2 teaspoons grated green bell peppers (I use Penzies brand dried in jar)

Steps:

  • Combine all ingredients into a food processor and puree as fine as possible (applesauce consistency). Then pour into a sauce pan and simmer for 15 min stirring often. Let cool and pour into a container. It will keep in the fridge for a couple of weeks.
  • Taylormade Tip - Fry you bacon medium crisp so the bits have a sofltly mild crunch. If you fry to a extra hard crisp, the bits will be too hard for the consistancy of this sauce, Also, you really don't have to grate up your onion and apple real fine, as the food processor or grinder will puree it all for you, reducing prep time.
