6 large Portobello Mushrooms
4 tbsps. pesto sauce (2 tsps. for each mushroom)
1 1/2 cups of shredded mozzarella cheese
3/4 cup fresh shredded
2 tbsps. of olive oil
1 tsp. salt to taste
1 tbsps. fresh cracked black
1 cup cherry tomato (cut in halves)

Steps:

  • Clean mushrooms and remove stems.
  • Place on a non-stick sheet pan and brush each side of the mushroom with olive oil.
  • Sprinkle some salt and pepper on each side.
  • Place 2 tsps. of pesto sauce into each mushroom and brush evenly.
  • Fill each mushroom with 1/4 cup of shredded mozzarella cheese and then sprinkle some fresh basil on top of the cheese.
  • Add a few pieces of tomatoes, leaving spaces between them. Fill those spaces with the fresh shredded mozzarella cheese. Top with more chopped basil leaves.
  • Bake in a preheated 375 degree oven for 12 minutes then turn on the broiler to broil the top for 1-2 minutes until the cheese obtains a golden color.
  • Remove from heat and serve.

2 tablespoons butter
2 cloves garlic, (crushed)
1 tablespoon freshly chopped parsley
5-6 large Portobello Mushrooms, (tem removed, washed and dried thoroughly with a paper towel)
5-6 fresh mozzarella cheese balls, (sliced thinly)
1 cup grape, ((or cherry) tomatoes, sliced thinly)
fresh basil, (shredded to garnish)
1/4 cup balsamic vinegar
2 teaspoons brown sugar ((OPTIONAL))

Steps:

  • Preheat oven to grill/broil settings on high heat. Arrange oven shelf to the middle of your oven.
  • Combine all of the Garlic Butter ingredients together in a small saucepan (or microwave safe bowl), and melt until garlic is fragrant. Brush the bottoms of each mushroom and place them, buttered side down, on a baking tray.
  • Flip and brush any remaining garlic over the insides of each cap. Fill each mushroom with the mozzarella slices and tomatoes, and grill/broil until cheese has melted and golden in colour (about 8 minutes).
  • To serve, top with the basil, drizzle with the balsamic glaze and sprinkle with salt to taste.
  • (If making from scratch, prepare while mushrooms are in the oven.) Combine sugar (if using) and vinegar in a small saucepan over high heat and bring to the boil. Reduce heat to low; allow to simmer for 5-8 minutes or until mixture has thickened and reduced to a glaze. (If not using sugar, allow to reduce for 12-15 minutes on low heat).

3 tablespoons extra-virgin olive oil, divided
1 medium clove garlic, minced
½ teaspoon salt, divided
½ teaspoon ground pepper, divided
4 portobello mushrooms (about 14 ounces), stems and gills removed (see Tip)
1 cup halved cherry tomatoes
½ cup fresh mozzarella pearls, drained and patted dry
½ cup thinly sliced fresh basil
2 teaspoons best-quality balsamic vinegar

Steps:

  • Preheat oven to 400 degrees F.
  • Combine 2 tablespoons oil, garlic, 1/4 teaspoon salt and 1/4 teaspoon pepper in a small bowl. Using a silicone brush, coat mushrooms all over with the oil mixture. Place on a large rimmed baking sheet and bake until the mushrooms are mostly soft, about 10 minutes.
  • Meanwhile, stir tomatoes, mozzarella, basil and the remaining 1/4 teaspoon salt, 1/4 teaspoon pepper and 1 tablespoon oil together in a medium bowl. 4 portabella mushrooms, with stems removed
1 cup mozzarella cheese, cubed
1 cup tomatoes, cubed
1/4 cup fresh basil, ribboned

balsamic vinegar

  • Lightly brush mushroom caps with olive oil and using a fork slightly puncture the underside to allow for greater absorption.

4 large portobello mushrooms (wiped clean and de-stemmed)
kosher salt
freshly ground black pepper
1/2 cup marinara (or use store bought)
8 ounces fresh mozzarella (sliced)
fresh basil leaves
red pepper flakes (for serving (optional))

Steps:

  • Preheat your oven to 400°.
  • Place the prepared, de-stemmed mushrooms (stem-side facing up) onto a wire rack that is set into a rimmed metal baking sheet.
  • Season each cap with a small pinch of salt and pepper. Spoon and spread the marinara into the middle and underneath the lip of each mushroom. Top each one with a couple slices of fresh mozzarella and bake for 18 to 20 minutes or until the cheese is melted and the sauce is bubbling.
  • Serve immediately and top with fresh basil and red pepper flakes for some kick.

2 garlic cloves, halved
1/2 cup extra-virgin olive oil
3 tablespoons balsamic vinegar
2 teaspoons coarse salt

3 medium tomatoes, sliced 3/4 inch thick (8 slices total)
1 bunch fresh basil
8 ounces fresh mozzarella, sliced 1/2 inch thick (4 slices total)
4 cups arugula
Toasted bread, for serving (optional)

Steps:

  • Preheat oven to 400 degrees. Place mushrooms and garlic on a rimmed baking sheet; coat with oil and vinegar. Sprinkle with 1 teaspoon salt, and season with pepper. Roast, shaking sheet occasionally, for 20 minutes. Flip mushrooms and garlic to recoat with oil. Add tomatoes; flip to coat in oil, sprinkle with remaining teaspoon salt, and season with pepper. Roast until mushrooms are tender and tomatoes are soft, 20 minutes more.

1/4 cup olive oil
3 tablespoons balsamic vinegar
2 teaspoons fresh thyme, Chopped (or 1/2 tsp/2 mL dried)

  • Remove thick end of mushroom stem, leaving about 1/2 inch (1 cm) attached to cap.
