2 boxes Betty Crocker™ pound cake mix
1 1/3 cups water or milk
1/2 cup butter or margarine, softened
4 eggs
2 cups whipping cream
1 cup packed dark brown sugar
1/4 cup butter or margarine
1 teaspoon vanilla
1 can (14 oz) sweetened condensed milk (not evaporated)
3/4 cup unblanched whole almonds, coarsely chopped, toasted
1/3 cup Betty Crocker™ Rich & Creamy vanilla frosting (from 1-lb container)

Steps:

  • Heat oven to 350°F. Grease 13x9-inch pan with shortening. Make cake mix as directed on box, using water, 1/2 cup butter and the eggs. Spread batter evenly in pan. Bake 45 minutes or until toothpick inserted in center comes out clean. Cool in pan on cooling rack 30 minutes.
  • In 2-quart saucepan, heat whipping cream, brown sugar and 1/4 cup butter to boiling over medium-high heat. Reduce heat to medium; simmer uncovered about 15 minutes, stirring frequently, until thickened. Remove from heat; stir in vanilla. Cool slightly.
  • Poke warm cake every inch with handle of wooden spoon. Slowly pour condensed milk over cake. Let stand until milk has been absorbed into cake, about 5 minutes. Slowly drizzle with most of caramel sauce, pressing slightly into holes. Sprinkle with almonds. Drizzle with remaining caramel sauce. Cool completely. In small microwavable bowl, microwave frosting on High 10 to 15 seconds. Drizzle over cake. Cut into 6 rows by 3 rows.

1 ¾ cups white sugar
1 cup vegetable oil
2 eggs
3 cups chopped Winesap apples
2 ½ cups sifted self-rising flour
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
1 cup lightly packed brown sugar
½ cup butter
½ cup heavy whipping cream
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 300 degrees F (150 degrees C). Grease a 9x13-inch baking pan.

12 cups popped popcorn
3 cups unblanched whole almonds
1 cup packed brown sugar
1/2 cup butter or margarine
1/4 cup light corn syrup
1/2 teaspoon salt
1/2 teaspoon baking soda

Steps:

  • Heat oven to 200°. Place popcorn and almonds in very large roasting pan or divide popcorn mixture between 2 ungreased rectangular pans, 13x9x2 inches.
  • Heat brown sugar, butter, corn syrup and salt in 2-quart saucepan over medium heat, stirring occasionally, until bubbly around edges. Continue cooking 5 minutes without stirring; remove from heat. Stir in baking soda until foamy.

2/3 pound almond paste, or marzipan
2/3 cup unsalted butter, room temperature
3 large eggs
4 tablespoons all-purpose flour
1 cup heavy cream, divided
1/3 cup glucose, or light corn syrup
1/2 cup sugar
1/2 cup unsalted butter
1 cup sliced almonds

Steps:

  • Cake: Preheat the oven to 325 F. In the bowl of a stand mixer fitted with a paddle attachment, mix almond paste and butter on low speed, 1 minute. Meanwhile, crack the eggs into a small bowl. Turn mixer up to medium and add the eggs one at a time to the almond paste mixture. Allow each egg to completely incorporate into the batter, about 30 seconds, before adding the next one; this will ensure a smooth batter. Slowly add flour and continue mixing just to incorporate, 10-15 seconds.
  • Prepare a springform pan with nonstick spray. Line the bottom with parchment paper and spray the parchment paper (this will prevent the cake from sticking). Pour batter into the pan, spreading it evenly across the bottom. Parbake until lightly golden, 10 minutes.
  • Caramel topping: While cake is in the oven, add ½ cup cream, sugar, glucose, and butter to a small saucepan. Bring to a boil over high heat and cook undisturbed until caramel is light brown and registers 244 F on a kitchen thermometer, 4-5 minutes. Remove from heat and stir in almonds to combine. As you stir, avoid scraping up any browned caramel that may be sticking to the bottom of the pan.
  • Remove cake from the oven; it will be gooey and not fully cooked. Carefully pour the warm caramel onto the cake; spread evenly. Return to the oven; bake until the caramel is golden brown and bubbly, 10 minutes.
  • Remove cake from oven and let cool, 10-15 minutes. The top will firm up as it cools. Remove cake from pan by running a knife around the edge, then remove the sides from the base. (Keep the cake on the base for serving.) While the cake is cooling, whip cream for serving: Place remaining 1 cup heavy cream in a bowl and whisk until soft peaks form, 30 seconds. Slice cooled cake into wedges and serve with whipped cream.

100 g butter or margarine
120 g caster sugar
2 eggs
150 g plain flour
1 tsp baking powder
100 - 150 g flaked almonds
100 g butter or margarine
150 g sugar
2 tbsp flour (approx 30 g)
4 tbsp single cream or milk (60ml)

Steps:

  • Cream the margerine and sugar, beat in the eggs, and fold in the four, and baking powder.
  • Spoon into a large tin lined with silicon baking sheet (not greaseproof paper or the topping will stick) or directly into a silicone tin - I use a 9" silicone tin
  • Bake in preheated oven at 170 C fan/ 190 C/ gas 5 for 20 minutes, meanwhile make topping:
  • Place all the topping ingredients except almonds in a saucepan over a low heat till till melted. Once all melted, add almonds
  • Remove cake from oven (it should look cooked) and pour topping mixture over, and return to the oven for a further 20 minutes

Tips:

  • Make sure the cake is completely cool before poking holes in it. This will help prevent the caramel from seeping out.
  • Use a toothpick or skewer to poke holes in the cake. This will help the caramel evenly distribute throughout the cake.
  • If you don't have a cake mix, you can make your own from scratch. Just follow your favorite cake recipe and bake it in a 9x13 inch pan.
  • You can use any type of caramel sauce you like for this recipe. If you don't have caramel sauce, you can make your own by melting 1 cup of sugar in a saucepan over medium heat. Once the sugar has melted, add 1/4 cup of butter and 1/4 cup of heavy cream. Stir until the mixture is smooth and combined.
  • Top the cake with chopped almonds before serving. This will add a nice crunch and flavor to the cake.
