4 (3/4 inch) thick pork chops
Apple Juice
1 teaspoon vegetable oil
2 tablespoons brown sugar
salt and pepper to taste
1/8 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
2 tablespoons unsalted butter
2 tart apples - peeled, cored and sliced
3 tablespoons pecans (optional)
1/2 bottle Soy Sauce

In a small bowl, combine brown sugar, salt and pepper, cinnamon and nutmeg. Add butter to skillet, and stir in brown sugar mixture and apples. Pour caramel mix over top of chops, along with 1/2 the apple juice/soy sauce mix. Turn oven to 350, and bake uncovered for 25-30 minutes, or until pork chops are cooked all the way through (internal temp of a min 145). Spoon sauce over apples and chops. Sprinkle with pecans.

Tips:

  • For a sweeter pork chop, use a sweeter apple variety, such as Honeycrisp or Fuji.
  • If you don't have apple cider vinegar, you can substitute white vinegar or lemon juice.
  • To make the sauce ahead of time, simply refrigerate it for up to 3 days. When you're ready to serve, reheat the sauce over low heat until warmed through.
