1 teaspoon baking soda
1 teaspoon salt
3 eggs
2 1/4 cups granulated sugar
1 1/4 cups vegetable oil
3 teaspoons vanilla
1 1/2 cups coarsely chopped pecans
1/4 cup butter or margarine, softened
1/4 cup packed light brown sugar
1/4 cup whipping cream

Steps:

  • Heat oven to 350°F. Grease 12-cup fluted tube cake pan with shortening; lightly flour. In medium bowl, gently toss pears and 1 tablespoon granulated sugar; let stand 5 minutes.
  • Meanwhile, in another bowl, mix flour, baking soda and salt. In large bowl, beat eggs, 2 cups of the granulated sugar, the oil and 2 teaspoons of the vanilla with electric mixer on medium speed until blended.
