Steps:
- Place the oil and onions in a medium skillet. Cook slowly, stirring occasionally, over medium-low heat until brown, 15 minutes.
- Add the apples carrots, and water. Cover and continue to cook slowly until the carrots are tender, 5 to 7 minutes.
- Puree some of the onion mixture in a blender or food processor for the baby and serve the rest as is to your family. Makes 2 cups.
Tips:
- To caramelize onions properly, use a heavy-bottomed pan and cook them slowly over low heat. Stirring too frequently will prevent them from caramelizing.
- Use a variety of apples for this recipe. A mix of sweet and tart apples will create a more complex flavor.
- If you don't have parchment paper, you can use aluminum foil instead. Just be sure to grease the foil lightly with cooking spray to prevent the onions and apples from sticking.
- Serve the caramelized onion en papillote with a side of your favorite roasted or mashed potatoes.
Conclusion:
Caramelized onion en papillote is a simple yet elegant dish that is perfect for a special occasion. The sweet and savory flavors of the onions and apples are perfectly complemented by the crispy pastry. This dish is also a great way to use up leftover onions and apples.
