1 tablespoon butter
4 tablespoons brown sugar
10 cups onions, thinly sliced (see note)
4 garlic cloves, minced
2 tablespoons vinegar (red wine vinegar)
3/4 teaspoon salt
1/4 teaspoon black pepper, freshly ground

Steps:

  • NOTE: About those onions -- 10 cups is somewhere between 3 and 4 very large onions. The recipe I took this from called for sweet onions. First time I made it, I used Vidalia -- and thought they made it a little bland. Next time I tried spicier brown onions, and thought it had a lot more flavor.
  • In a LARGE skillet, melt butter. Add brown sugar and stir until it dissolves.
  • Add onion and garlic to skillet. Stir to coat with butter/sugar mixture. Cover and cook over medium heat for at least 30 minutes; you can cook them much longer and it will only make it sweeter.
  • Uncover and add vinegar to onion mixture. Cook, uncovered for at least 10 minutes. (I found I cooked it nearly 45 minutes, to try to reduce some of the liquid.).
  • Add salt and pepper.
  • Serve at room temperature or even chilled.

2 tablespoons butter
1/4 cup packed brown sugar
1 tablespoon balsamic vinegar
2 garlic cloves, minced
1/4 teaspoon salt
Dash pepper
2 packages (1.9 ounces each) frozen miniature phyllo tart shells
1 round (8 ounces) Brie cheese, cut into 30 pieces
Toasted slivered almonds, optional

Steps:

  • In a large skillet, saute onions in butter until softened. Add brown sugar, vinegar and garlic. Reduce heat to medium-low; cook, stirring occasionally, for 35-40 minutes or until deep golden brown. Stir in salt and pepper., Place tart shells on an ungreased baking sheet. Place one piece of cheese in each; top with onion mixture., Bake at 350° for 8-10 minutes or until lightly browned. Sprinkle with almonds if desired. Serve warm.
