CARDAMOM BALLS

These spice laden gems are not overly sweet which is a nice change from the chocolate coated chock full of chips cookies my kids want me to make. Not too sweet with plenty of flavor and the smaller size means you can have three and not just one. And yes you really need to grind your own nutmeg and cardamom, it does make a big difference. You can adjust the clove and cardamom to taste. I go easy on the clove and heavy cardamom.

Tips:

1. **Choose fresh cardamom pods**: Look for cardamom pods that are plump, green, and have a strong aroma. Avoid pods that are brown or have a musty smell. 2. **Roast the cardamom pods**: Roasting the cardamom pods enhances their flavor and aroma. You can roast them in a pan over medium heat or in the oven at 350 degrees Fahrenheit for about 5 minutes. 3. **Grind the cardamom pods**: Once the cardamom pods are roasted, grind them into a fine powder using a spice grinder or mortar and pestle. 4. **Use a food processor**: A food processor makes it easy to combine the cardamom powder with the other ingredients. 5. **Chill the dough**: Chilling the dough for at least 30 minutes helps it to firm up and makes it easier to roll into balls. 6. **Roll the balls in nuts**: Rolling the balls in nuts adds a delicious crunch and flavor. You can use chopped pistachios, almonds, or walnuts. 7. **Serve immediately**: Cardamom balls are best served immediately after they are made. However, you can store them in an airtight container in the refrigerator for up to 2 weeks.
