2 packages (14 ounces each) coleslaw mix
1 cup unsweetened pineapple tidbits
1/2 cup sweetened shredded coconut
1/2 cup golden raisins
1/2 cup finely chopped sweet red pepper
1-1/2 cups mayonnaise
1/2 cup unsweetened pineapple juice
3/4 teaspoon salt
1/4 teaspoon celery seed
1/4 teaspoon pepper

Steps:

  • Place the first 5 ingredients in a serving bowl. In a small bowl, combine remaining ingredients. Pour over slaw mix; toss to coat. Refrigerate until serving.

12 oz bag of coleslaw mix
3/4 c mayonaise such as hellmans
1/3-1/2 c unsweetened pineapple tidbits cut in to tiny pieces, or fresh pineapple.
1/4 c pineapple juice from above pineaple tidbits
NOTE: IF YOU CAN'T FIND CANNED PINEAPPLE TID BITS. CUT CHUNK PINEAPPLE IN TO SMALLER PIECES
1/4 c sweetened coconut
1/4 c golden raisins or regular raisins
1/4 c finely chopped red bell pepper
salt and pepper to taste
1/8 tsp celery seed

Steps:

  • 1. Mix all ingredients together well in a bowl. Refrigerate for at least 4-8 hours. The longer it sits in the refrigerator. The better it will be. It would be great to make this and let it sit overnight before serving the next day.
  • 2. Mix well before serving !

1/2 head cabbage, shredded fine
4 large carrots, shredded fine
1 (16 ounce) can pineapple chunks, drained
black pepper
3 tablespoons white wine vinegar
2 scotch bonnet peppers, seeded and chop fine
3/4 cup Carnation Evaporated Milk
1/2 cup olive oil
1 teaspoon salt
1 tablespoon Dijon mustard or 1 tablespoon spicy brown mustard
1/4 cup eagle brand sweetened condensed milk

Steps:

  • Shred cabbage fine.
  • Shred carrots fine.
  • Drain well canned pineapple chunks.
  • Combine fruit and vegies in a large bowl and toss.
  • To prepare the dressing:.
  • Combine sweetened condensed milk with the mustard of choice and salt.
  • Gradually add a little bit (a teaspoon at a time) of the oil, beating constantly.
  • Continue adding oil slowly, beating all the while.
  • Gradually beat in the evaporated milk, vinegar and peppers.
  • Pour dressing over all, and toss.
  • Cover and refrigerate until needed.
  • You can also add a few green spring chopped onions if desired.

1/2 c nuts, chopped
2 Tbsp sugar
2 Tbsp dry jerk seasoning (or to taste)
3/4 c carrots, shredded
1/2 c mayonnaise
1 Tbsp cider vinegar

  • 1. Combine the shredded cabbage, carrots and nuts in a large bowl and set aside.
