Yield 4

Number Of Ingredients 12

4 cups low-sodium vegetable broth
2 cups water
1 medium red onion, chopped
2 tablespoons peeled and minced fresh ginger
4 cloves garlic, minced
1 teaspoon salt
1 bunch collard greens (or kale), ribs removed and leaves chopped into 1-inch strips
3/4 cup unsalted peanut butter (chunky or smooth)
1/2 cup tomato paste*
Hot sauce, like sriracha (AKA rooster sauce)
1/4 cup roughly chopped peanuts, for garnish
Cooked brown rice, for serving (optional)

Steps:

  • Combine the broth and water in a medium Dutch oven or stock pot. Bring the mixture to a boil, then add the onion, ginger, garlic and salt. Cook on medium-low heat for 20 minutes.
  • In a medium-sized, heat-safe mixing bowl, combine the peanut butter and tomato paste, then transfer 1 to 2 cups of the hot stock to the bowl. Whisk the mixture together until smooth, then pour the peanut mixture back into the soup and mix well. Stir in the collard greens and season the soup with hot sauce to taste.
  • Simmer for about 15 more minutes on medium-low heat, stirring often. Season with additional salt or hot sauce if desired. Serve over cooked brown rice if you'd like, and top with a sprinkle of chopped peanuts.

CARIBBEAN PEANUT SOUP

It doesn't get much more simple than this. It's from Mark Bittman's book, "The Best Recipes in the World". This has so few ingredients that it really does need to be made with homemade stock. If you want the creaminess of using cream, but not the fat, you could use skim-milk evaporated milk.

PEANUT SOUP

Peanut Soup image

Categories     Sauce     Side     Peanut     Simmer

Yield makes 4 servings

Number Of Ingredients 6

2 cups unsalted roasted peanuts or 1 cup peanut butter
1 medium onion, peeled and quartered
1 quart chicken stock or vegetable stock, preferably homemade
1 cup milk or heavy cream
Salt to taste
Cayenne, hot red pepper flakes, or Tabasco sauce to taste

Steps:

  • Place the peanuts in a food processor and process until the mixture is smooth and buttery, stopping the machine to scrape down the sides as necessary. If you are using peanut butter, just place it in the processor. Add the onion and process until well combined. With the machine running, pour in the stock.
  • Transfer the peanut mixture to a saucepan and place over medium-low heat. Simmer until the mixture thickens, about 7 minutes. Slowly stir in the milk, then season with salt and cayenne. Serve with simple crackers.

Tips:

  • Use a good quality peanut butter: The peanut butter is the star of this soup, so make sure you use a brand that you like the taste of. Avoid using natural peanut butter, as it can be too oily and thin.
  • Roast the peanuts: Roasting the peanuts adds a deeper flavor to the soup. If you don't have time to roast the peanuts, you can skip this step, but the soup will not be as flavorful.
  • Use a variety of vegetables: The vegetables in this soup add sweetness, texture, and nutrients. Feel free to add or remove vegetables based on your preferences. Some good options include carrots, celery, onions, bell peppers, and spinach.
  • Add some spice: The cayenne pepper in this soup adds a bit of heat, but you can adjust the amount to your liking. If you don't like spicy food, you can omit the cayenne pepper altogether.
  • Serve with your favorite toppings: This soup is delicious on its own, but you can also serve it with a variety of toppings to add even more flavor. Some good options include chopped peanuts, cilantro, and lime wedges.

Conclusion:

This Caribbean peanut soup is a delicious and easy-to-make soup that is perfect for a weeknight meal. It is creamy, flavorful, and packed with vegetables. Serve it with your favorite toppings and enjoy!
