1 habanero, seeded and chopped
1/4 cup soy sauce
1/4 cup honey
1/4 cup brown sugar
2 tablespoons sugar
2 teaspoons fennel seed
2 teaspoons cayenne pepper
2 teaspoons allspice
2 teaspoons dried thyme
1 teaspoon ground ginger
4 garlic cloves, chopped
4 green onions, chopped
1/4 cup apple cider vinegar
1/4 cup lime juice
1/4 cup orange juice
7 pounds chicken wings

Steps:

  • In a food processor, blend together all the ingredients but the chicken until smooth. Reserve 1 cup of marinade. Place chicken wings into a large resealable plastic bag and pour remaining marinade over them. Seal and marinate in the refrigerator 4 to 6 hours.
  • Preheat oven to 350 degrees F. Line 2 sheet trays with parchment. Remove chicken from bag and place on the baking sheets. Bake 20 minutes. Meanwhile, in a small saucepan bring reserved marinade to a boil. Reduce by 1/3 until it thickens slightly, about 10 minutes. After 20 minutes, remove chicken from oven. Brush chicken with the glaze. Raise the heat to 400 degrees F and cook chicken until cooked through, another 20 minutes.

1/2 habanero pepper, seeded and chopped
2 tablespoons soy sauce
2 tablespoons honey
2 tablespoons packed light brown sugar
1 tablespoon granulated sugar
1 teaspoon fennel seeds
1 teaspoon cayenne pepper
1 teaspoon allspice
1 teaspoon dried thyme
1/2 teaspoon ground ginger
2 cloves garlic, chopped
2 scallions, chopped
2 tablespoons apple cider vinegar
2 tablespoons fresh lime juice
2 tablespoons fresh orange juice
3 pounds chicken wings

Steps:

  • Combine the habanero, soy sauce, honey, both sugars, fennel seeds, cayenne, allspice, thyme, ginger, garlic and scallions in a blender. Add the vinegar, lime juice and orange juice and blend until smooth. Place the wings in a large resealable plastic bag and pour the marinade over them. Seal and refrigerate 4 to 6 hours.
  • Preheat the oven to 350 degrees F. Line 2 baking sheets with parchment paper. Remove the wings from the bag, place on the lined sheets and bake 20 minutes. Meanwhile, bring the marinade to a boil in a small saucepan over medium heat and cook until reduced by one-third, about 10 minutes.
  • Remove the wings from the oven and brush with the glaze. Raise the oven temperature to 400 degrees F and continue to bake until the wings are cooked through, 20 more minutes.

WOW...is all I can say. I made these over the weekend to give the recipe a test run and it is a keeper for us. I was looking for new appetizers for a few get togethers during the holiday season and found this easy and very tasty wing recipe.

4 pound(s) chicken wings,cut in half and discard wing tip
2 tablespoon(s) olive oil
2 teaspoon(s) dried thyme leaves
1/2 cup(s) orange juice
1/4 cup(s) lime juice
1/4 cup(s) lemon juice
4 medium garlic cloves,minced
2 tablespoon(s) jalapeno pepper sauce (tabasco)

Steps:

  • Toss wings with oil, thyme and a light sprinkling of salt and pepper in a medium bowl. Spray a large rimmed baking sheet with vegetable cooking spray( I used non stick foil and sprayed it as well for easy clean up...you can also use parchment paper for easy clean up); arrange wings in a single layer. Adjust oven rack to lowest position. Set baking sheet on oven rack in cold oven and preheat to 450 degrees. Roast for 30 minutes.
  • Remove wings from oven and use a spatula to turn; continue to roast until golden brown, about 10 minutes longer.
  • Meanwhile, mix citrus juices, garlic and pepper sauce. Pour over wings; return to oven; roast to blend flavors, about 5 minutes longer. Scrape wings and sauce onto a platter. Garnish with very thinly cut scallion for added flavor and color.

  • Heat oven to 400°F.
  • Spread wings onto rimmed baking sheet sprayed with cooking spray.
  • Bake 50 min. to 1 hour or until done, turning after 30 min. Meanwhile, mix remaining ingredients until blended.
  • Remove wings from oven. Heat broiler. Brush wings with half the ketchup mixture.
  • Broil, 4 inches from heat, 2 min. Turn; brush with remaining ketchup mixture. Broil additional 2 min.
