Provided by Food Network

Number Of Ingredients 7

1 green pepper, small dice
1/2 Spanish onion, small dice
4 to 5 cloves garlic, minced
1/2 cup cilantro, chopped
1 pork shoulder with bone and skin left on
Salt and pepper, to taste
Sofrito

Steps:

  • For the marinade: Mix together all ingredients and set aside to let flavors meld together.
  • Procedure for the pernil. Preheat oven to 450 degrees. Wash pork under cold running water and pat dry with paper towels. With a sharp paring knife, pierce the flesh. Season with salt and pepper and rub sofrito all over, covering the entire piece of meat. Let marinate for no less than 2 hours but better if overnight. Place pork on an oven rack and place in roasting pan and add enough water to just cover bottom of pan. Put roasting rack in center of the oven and let cook for 20 minutes. Turn the oven down to 350 degrees and let cook until juices run clear. The pork should be firm to the touch. Take the pork out of the oven and let rest for about 10 to 15 minutes. Peel away the skin when cool enough to touch and save, for this is a traditional Caribbean delicacy. Slice meat into bite-size pieces and serve with arroz con gandules.

CARIBBEAN SWEET AND SOUR PORK

Caribbean Sweet and Sour Pork image

The following recipe calls for boiling the pork, which removes even more fat from the already lean pork filet. The sauce is practically fat free. You can also prepare this dish substituting cooked chicken, beef, fish, or shellfish for the pork. Recipe is from Club Med 1. Club Med 1 is the world's largest sailboat, over 600 feet of luxury, designed to take guests to the islands of their fantasies.

Time 30m

Yield 6 serving(s)

Number Of Ingredients 14

3 tablespoons vegetable oil
2 tablespoons finely chopped peeled fresh ginger
1 tablespoon finely chopped garlic
1 cup coarsely chopped carrot
1 cup coarsely chopped onion
1 cup coarsely chopped green bell pepper
1 cup crushed pineapple in juice
1/4 cup white wine vinegar
1 tablespoon sugar
1/2 tablespoon fresh ground black pepper or 1/2 tablespoon white pepper
1 1/2 cups ketchup
1/2 cup pineapple juice or 1/2 cup water
2 1/4 lbs boneless pork filets, cut into bite-sized cubes, at room temperature
cooked rice, for serving

Steps:

  • In a large saucepan, heat the oil. Add ginger and garlic and sauté over a low flame for 5 minutes until fragrant. Do not brown the garlic or it will taste bitter. Add the carrots, sauté another 5 minutes. Add the onion and peppers and sauté about 3 minutes-until the green peppers lose their rawness, but aren't cooked thoroughly.
  • Add the cup of pineapple and its juice and the vinegar. Bring to a boil over high heat. Reduce the heat to medium and cook for 5 minutes.
  • Add the sugar, pepper, ketchup, and ½ cup of pineapple juice or water. Stir very well and continue to cook an additional 5 minutes.
  • Cook the pork in boiling water for 10 in minutes, testing the meat for doneness after 5 minutes. Cut a piece open-if it's not pink inside, it's done. When done, drain and add the pork to the sauce. Cook together for 2 minutes.
  • Adjust seasoning, tasting for salt, pepper, and vinegar. Add more if desired. Serve with cooked rice. Serves 6.
  • NOTE: This dish should be served immediately. It toughens if held in the refrigerator.

Tips:

  • Choose the right cut of pork: Shoulder or butt roast is best for this recipe, as it is a fatty and flavorful cut that will braise well.
  • Use a good quality jerk seasoning: Authentic Jamaican jerk seasoning is a blend of allspice, pimento, thyme, scotch bonnet peppers, and other spices. You can find it at most Caribbean grocery stores or online.
  • Don't be afraid to adjust the heat level: If you like your food spicy, add more scotch bonnet peppers to the seasoning. You can also add some habanero or ghost peppers for an even hotter dish.
  • Braise the pork until it is fall-apart tender: This will take at least 2 hours, but it is worth the wait. The longer the pork braises, the more flavorful it will be.
  • Serve the pork with your favorite sides: Rice and peas, steamed vegetables, or fried plantains are all great options.

Conclusion:

Caribbean pork is a delicious and flavorful dish that is perfect for any occasion. It is easy to make, and it can be tailored to your own personal taste. Whether you like it spicy or mild, this recipe is sure to please everyone at your table.
