1 pound ground turkey
1 large yellow onion, chopped
3 cloves garlic, minced
1 tablespoon minced seeded canned chipotle pepper in adobo sauce
1 (28 ounce) can no-salt-added diced tomatoes
2 medium sweet potatoes (about 5 oz. each), peeled and diced
2 cups unsalted chicken broth
¾ teaspoon salt
2 tablespoons lime juice
Chopped avocado for garnish

Steps:

  • Heat oil in a large heavy pot over medium-high heat. Add turkey; cook, stirring often to crumble, until browned, about 5 minutes. Add onion and garlic; cook, stirring often, until softened, about 5 minutes. Add chipotle; cook, stirring constantly, until fragrant, about 1 minute. Stir in tomatoes, sweet potatoes, broth and salt. 1 small onion, chopped
2 cups chicken broth
1 can (15 ounces) sweet potato puree or canned pumpkin
1 can (4 ounces) chopped green chiles
1 tablespoon chili powder
1 teaspoon garlic powder
1 teaspoon ground cumin
1 teaspoon curry powder
1/2 teaspoon dried oregano
1/2 teaspoon salt
1 can (15-1/2 ounces) great northern beans, rinsed and drained

1 1/4 lbs lean ground turkey
1 garlic clove, minced
1 (15 ounce) can black beans, drained and rinsed

1 (14 1/2 ounce) can fat-free low-sodium chicken broth

1 pound 99-percent fat-free ground turkey
1 medium onion, diced
3 cloves garlic, minced
1/4 cup chili powder
1 tablespoon ground cumin
2 teaspoons ground coriander
3 tablespoons tomato paste
Kosher salt and freshly ground black pepper
2 medium sweet potatoes, peeled and cut into 1/2-inch cubes
4 ripe plum tomatoes, chopped
Two 14-ounce cans black beans, drained and rinsed
1/4 cup chia seeds
1 to 2 tablespoons apple cider vinegar
3 scallions, sliced
1/4 cup reduced-fat sour cream, optional

Steps:

  • Heat 1 1/2 teaspoons of the oil in a large Dutch oven over medium-high heat. Add the turkey and cook, breaking up chunks with the side of a wooden spoon, until browned, about 5 minutes. Push the turkey to the edges of the pan, leaving the middle empty. Reduce the heat to medium and add the remaining 1 1/2 teaspoons oil and then the onion and garlic to the center of the pan.
