Steps:
- Place the skirt steak in a large glass bowl or resealable plastic bag.
- To make the marinade, add the cilantro, olive oil, orange juice, lime juice, honey, oregano, garlic and serrano chile to a blender. Season with a small pinch of salt and pepper. Blend for 35 to 40 seconds to combine.
- Pour the marinade all over the steak, moving it around to make sure everything is covered. Cover or seal and transfer to the refrigerator and allow to marinate for at least 1 hour, but no more than 6 (too long in the marinade will cause the steak to begin breaking down).
- Preheat a grill or grill pan over medium-high heat.
- When ready, remove the steak from the marinade, letting the excess drip off. Sprinkle generously with salt and pepper and grill about 4 minutes per side for medium.
- Remove to a cutting board and allow to rest for 5 to 7 minutes. Slice the steak against the grain and serve with the lime wedges.

CHILE VERDE GUACAMOLE
Mexicans are split into two camps when it comes to guacamole: those who always add lime juice and those who absolutely do not. Many Sonoran friends shout "Never!" at the mere suggestion. Having grown up in the pro-lime camp in Mexico City, I was filled with skepticism before trying versions from the deep Mexican north, but what a pleasant surprise. The creamy and nutty avocado takes a deserving central role in Sonoran guacamoles. What won me over was the combination of two chiles: roasted Anaheim, with its tart, fresh, peppery flavors, and raw serrano, with its grassy taste and heat. (I hate to admit it, but this guacamole really needs no lime.)

Steps:
- Place the Anaheim chile on a small baking sheet covered with aluminum foil. Roast it under the broiler, flipping a couple times, until the chile is wilted and its skin is completely charred and wrinkly, 9 to 12 minutes. (Alternatively, you can char the chile directly on a hot comal or a cast-iron pan set over medium heat, or on a grill set to high.)
- Place the charred Anaheim chile in a plastic bag and close it well. Let it steam and sweat for 5 to 10 minutes.
- As the Anaheim chile steams, add the serrano chile, onion, cilantro and salt in a bowl or molcajete, and mash until combined. Add the avocado and continue to mix and mash until you form a chunky purée.
- Once it is cool enough to handle, remove the Anaheim chile from the bag, slip off the charred skin, make a slit down the side and remove the seeds and stem. You could rinse the chile under a thin stream of water, to help remove the seeds, or rinse it off by dipping it into a bowl of water.
- Finely chop the Anaheim chile. Add it to the avocado mixture, and stir to combine. Season to taste with salt.
Tips:
- Choose high-quality flank steak or skirt steak for the carne asada. These cuts are tender and flavorful when cooked properly.
- Use a sharp knife to slice the steak against the grain. This will help to tenderize the meat and make it easier to chew.
- Marinate the steak in a mixture of spices, herbs, and citrus juices for at least 30 minutes. This will help to infuse the meat with flavor.
- Cook the steak over high heat for a short period of time. This will help to keep the meat tender and juicy.
- Serve the carne asada with a variety of toppings, such as guacamole, salsa, sour cream, and cilantro.
- For the chile verde, use a variety of chiles, such as poblano, serrano, and jalapeño. This will give the sauce a complex flavor.
- Roast the chiles before adding them to the sauce. This will help to bring out their flavor and make them easier to digest.
- Add a variety of herbs and spices to the chile verde sauce, such as cumin, oregano, and garlic. This will help to create a flavorful and aromatic sauce.
- Simmer the chile verde sauce for at least 30 minutes. This will help to develop the flavor and thicken the sauce.
- Serve the chile verde with carne asada, rice, and beans.
Conclusion:
Carne asada con chile verde is a delicious and flavorful dish that is perfect for any occasion. The tender and juicy steak is complemented by the spicy and aromatic chile verde sauce. This dish is sure to please everyone at your table. So next time you're looking for a new and exciting dish to try, give carne asada con chile verde a try!
