1 large egg, beaten
1 cup lowfat or whole milk
1 tablespoon grapeseed, vegetable or canola oil, plus more for greasing
Butter, for greasing (optional)
1/4 cup whipped cream cheese, at room temperature
1/4 cup pure maple syrup

4 ounces cream cheese, room temperature
2 tablespoons unsalted butter, room temperature
1/2 cup confectioners' sugar
1 teaspoon fresh lemon juice
1/2 teaspoon pure vanilla extract
Pinch fine salt
1 cup all-purpose flour
1/2 cup sugar
1 teaspoon baking powder
1 teaspoon ground cinnamon, plus more for dusting
3/4 teaspoon baking soda
1/2 teaspoon ground ginger
1/2 teaspoon fine salt
1/3 cup vegetable oil, plus more for brushing waffle iron
1/4 cup milk
1/2 teaspoon finely grated lemon zest
