GRATED CARROT SALAD WITH DATES AND ORANGES

Grated Carrot Salad With Dates and Oranges image

The influences here are Moroccan. The orange juice brings out the sweetness of the carrots. The juices combine in a delectable way, the salad sweetened all the more by the dates and cinnamon.

Time 10m

Yield Serves 4

Number Of Ingredients 8

1 pound carrots, grated on the medium blade of your grater
8 dates, pitted and quartered lengthwise
2 tablespoons fresh lemon juice
1/4 cup fresh orange juice
Salt to taste
1/4 teaspoon ground cinnamon, plus additional for sprinkling
2 tablespoons olive oil
2 to 3 oranges (as needed)

Steps:

  • In a large bowl combine the carrots and dates.
  • Whisk together the lemon juice, orange juice, salt, cinnamon and olive oil. Toss with the carrots.
  • Remove the peel and pith from one of the oranges. Cut the sections away from between the membranes, holding the orange above the bowl to catch juice. Cut the orange sections into halves or thirds, depending on the size, and toss with the carrots. Transfer to a platter or a wide bowl.
  • Slice the remaining orange or oranges into thin rounds. Cut the rounds in half, and arrange in an overlapping ring around the carrots. Sprinkle a little more cinnamon over the carrots and oranges, and serve.

KALE AND FETA SALAD

Kale and Feta Salad image

I've been making variations of this salad for years. I recently learned how to massage the kale and it makes a huge difference. I had a friend ask for my recipe and I realized I don't have one. This is my first attempt at writing a recipe, so please let me know how it works out! I like to change up the ingredients: sometimes a pear instead of an apple, cranberries instead of currants, Parmesan instead of feta, etc. Great as a side dish or by itself the next day for lunch!

Yield Makes 6 servings

Number Of Ingredients 11

1 teaspoon cumin seeds
2 teaspoons fresh lemon juice
2 teaspoons Sherry vinegar
1 teaspoon Dijon mustard
1/2 cup plus 3 teaspoons extra-virgin olive oil, divided
1 tablespoon finely chopped fresh mint
Kosher salt and freshly ground black pepper
1 pound baby carrots with 1/2" of tops attached, peeled
6 small (1 1/2" diameter) red beets, scrubbed, trimmed leaving 2" of stem attached
3/4 cup (lightly packed) flat-leaf parsley leaves, divided
1/2 cup crumbled feta (about 4 ounces)

Steps:

  • Stir cumin seeds in a small dry skillet over medium heat until fragrant, 3-4 minutes. Let cool. Finely grind in a spice mill.
  • Whisk cumin, lemon juice, vinegar, and Dijon mustard in a medium bowl. Gradually whisk in 1/2 cup oil, then mint. Season vinaigrette with salt and pepper.
  • Cook carrots in a large pot of boiling salted water for 1 minute; using a slotted spoon, transfer carrots to a bowl. Add beets to same pot of boiling water and cook until just tender, 20-25 minutes. Drain. Let stand at room temperature to cool slightly, about 15 minutes. Peel and trim beets; halve lengthwise. DO AHEAD: Vinaigrette and vegetables can be made 1 day ahead. Cover separately; chill. Return vinaigrette to room temperature and whisk before using.
  • Preheat oven to 450°F. Season carrots with salt and pepper. Toss with 1 1/2 teaspoons oil. Arrange on half of a large rimmed baking sheet. Place beets in same bowl; season with salt and pepper and toss with remaining 1 1/2 teaspoons oil. Arrange in single layer opposite carrots on same baking sheet. Roast vegetables, turning once, until slightly charred and just tender, about 15 minutes.
  • Place carrots, 1/2 cup parsley leaves, and feta in a medium bowl; drizzle 1/4 cup vinaigrette over and toss to coat. Arrange carrot mixture on a small platter. Place beets in another medium bowl. Add 2 tablespoons vinaigrette; toss to coat. Tuck beets in among carrots. Sprinkle remaining 1/4 cup parsley leaves over. Drizzle with remaining dressing.

Tips:

  • Choose the right carrots: Look for fresh, crisp carrots with bright orange color. Avoid carrots that are limp or have blemishes.
  • Peel the carrots thinly: This will help the carrots cook evenly and absorb the dressing better.
  • Slice the carrots diagonally: This will create a more interesting presentation.
  • Roast the carrots at a high temperature: This will help them caramelize and develop a slightly sweet flavor.
  • Add the dates and feta cheese at the end of roasting: This will prevent them from burning.
  • Use a good quality olive oil: This will add flavor and richness to the salad.
  • Make the dressing ahead of time: This will allow the flavors to meld.

Conclusion:

Carrot, Date, and Feta Salad is a delicious and healthy salad that is perfect for any occasion. It is easy to make and can be tailored to your own taste preferences. The roasted carrots are sweet and slightly caramelized, the dates add a chewy sweetness, and the feta cheese adds a salty tang. The dressing is light and flavorful, and it brings all of the ingredients together. This salad is sure to be a hit at your next potluck or party.
