1 small onion, chopped
1 garlic clove, minced
3 teaspoons minced fresh gingerroot
4 large carrots, peeled and chopped
3 cups vegetable broth
2 teaspoons grated lemon zest
1/2 teaspoon salt
1/4 teaspoon ground black pepper
2 tablespoons fresh lemon juice
Additional lemon zest, optional

Steps:

  • In a Dutch oven or stockpot, heat oil over medium heat. Add onion; cook and stir until tender, 4-5 minutes. Add garlic and ginger; cook 1 minute longer. Stir in carrots, broth, zest, salt and pepper; bring to a boil. Reduce heat; simmer, covered, until carrots are tender, 10-12 minutes. Pulse mixture in a blender or with an immersion blender to desired consistency; stir in lemon juice. 4 (244 g) medium carrots, peeled, halved or 2 cups chopped
1/4 (18 g) small onion, peeled or 2 tablespoons chopped
4 small garlic cloves, peeled
2 tablespoons (30 ml) oil
1/2 teaspoon salt
pinch of white pepper
1 tablespoon chopped fresh ginger root or Ginger Paste
1/3 cup (70 g) light silken tofu
2 cups (480 ml) low sodium vegetable or chicken broth

Steps:

  • 1. Place carrots, onion and garlic into the Vitamix container and secure lid.
  • 2. Select Variable 1.
  • 3. Turn machine on and slowly increase speed to Variable 4 or 5.

½ cup chopped onion
½ cup ginger liqueur
½ cup water
3 cubes chicken bouillon
4 tablespoons margarine
2 cups skim milk
2 tablespoons all-purpose flour
2 tablespoons white sugar
¼ teaspoon ground ginger
3 tablespoons chopped fresh parsley
salt to taste
ground black pepper to taste
