1 pound beef stew meat, cut into 1/2-inch pieces
1 tablespoon olive oil
2 cups sliced carrots
1 cup chopped onion
1 cup sliced celery
2 to 3 garlic cloves, minced
2 cups sliced baby portobello mushrooms
1 can (14-1/2 ounces) stewed tomatoes
1 cup water
1 cup dry red wine
1 cup beef broth
2 bay leaves
1 teaspoon salt
3/4 teaspoon dried thyme
1/4 teaspoon pepper
1/3 cup uncooked medium pearl barley
1/4 cup all-purpose flour
1/3 cup cold water
1 to 2 tablespoons balsamic vinegar

5 medium potatoes, quartered
1 tablespoon olive oil
1 ½ pounds boneless beef sirloin steak, cut into 1-inch cubes
2 (14 ounce) cans beef broth
1 (10.5 ounce) can condensed cream of mushroom soup
½ cup quick-cooking barley
1 medium onion, chopped
1 cup chopped fresh mushrooms
4 cloves garlic, minced
1 teaspoon dried oregano, or to taste
salt and ground black pepper to taste
½ (16 ounce) package frozen mixed vegetables

1 tablespoon olive oil
salt and pepper
1/4 cup green lentil, washed and picked over
1/4 cup uncooked barley
1/2 teaspoon salt
1 tablespoon olive oil
14 cremini mushrooms
1/2 medium yellow onion, chopped
1/4 cup carrot, chopped
1 stalk celery, chopped
3 garlic cloves, minced
2 1/2 cups low sodium vegetable broth
1/4 cup red wine
1 tablespoon tomato paste
1 tablespoon soy sauce
1/2 teaspoon smoked paprika
1/4 cup chopped fresh parsley

  • Mix sweet potato, oil and salt and pepper. Toss and place on baking sheet.

5 cups vegetable broth or 5 cups mushroom broth
1/2 cup pearl barley
5 cups mushrooms
2 cups kale
1 large onion, chopped
flour, to thicken (I used about 3/4 cup)
pepper, to taste

Steps:

  • Boil the broth. Once it's boiling, add the barley.
  • While the barley cooks, slice the mushrooms. And saute them in oil. (trying to get them to release as much juice as possible).
  • While the barley and mushrooms cook, chop the kale.
  • Then, take the flour, and the same amount of broth and whisk them together, and add it to the soup. (It will thicken more later).
  • By the time the mushrooms are cooked, and the kale is chopped, the barley should be a little more than half done, add the mushrooms and onions, and stir occasionally.
