2 tablespoons butter
1 cup onion, chopped
1 lb carrot, peeled and sliced & cooked
2 cups chicken stock
1/2 cup fresh orange juice
salt and pepper
1/4 teaspoon ground nutmeg
4 tablespoons whipping cream or 4 tablespoons yogurt
grated orange rind (for garnish)

Steps:

  • Brown the onion in the butter until soft.
  • Put onions carrots and chicken stock in a sauce pan.
  • Add Orange juice, heat to meld the flavors.
  • Puree in a food processor until very smooth season with salt& pepper and Return to saucepan and blend in the nutmeg.

2 pounds carrots, peeled, cut into equal-sized pieces
½ teaspoon salt, or more to taste
½ cup bourbon whiskey
⅓ cup brown sugar
1 pinch cayenne pepper, or to taste
freshly ground black pepper to taste
2 sprigs fresh thyme leaves for garnish

Steps:

  • Melt butter in a heavy skillet over medium-high heat.
  • When butter foams up, add carrots. Season with salt and cook, stirring, until liquid from carrots evaporates and carrots begin to brown around the edges, 5 or 6 minutes.
  • Reduce heat to medium-low. Carefully pour in bourbon. Cook and stir until bourbon is almost evaporated, about 2 minutes.
  • Sprinkle in brown sugar. Stir until carrots are almost cooked through, about 5 minutes.

2 cups all-purpose flour
1 tablespoon ground cinnamon
2 teaspoons baking soda
2 teaspoons baking powder
½ teaspoon salt
¼ teaspoon ground allspice
¼ teaspoon ground ginger
2 cups white sugar
4 large eggs
¾ cup vegetable oil
2 teaspoons vanilla extract
3 cups lightly packed shredded carrots, drained of excess water
4 tablespoons unsalted butter
1 tablespoon orange juice
½ large orange, finely zested
1 ounce bourbon whiskey, or more to taste
1 cup powdered sugar

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a 10-inch (12-cup) fluted tube pan (such as Bundt®).

1 pound carrots, peeled and sliced on an angle into 1/4-inch thick slices
2 tablespoons butter
2 tablespoons sugar
2 tablespoons orange juice
2 tablespoons grated ginger
1/4 teaspoon salt
1-ounce bourbon

Steps:

  • In a pot of water, bring carrots to a boil and cook for approximately 5 minutes, or until tender to the touch of a fork. Drain off water.
  • In a saute pan, over medium-high heat, add butter and sugar. Stir for approximately 3 minutes, or until sugar begins to brown. Add orange juice, ginger and carrots. Simmer for approximately 5 minutes, or until liquids thicken and becomes a glaze.

5 cups sliced and skinned carrots
1 medium onion, chopped finely
3 cups low sodium chicken broth or 3 cups low sodium vegetable broth
