Steps:
- 1. Combine dressing, soup mix and preserves in a saucepan. Heat thoroughly until all is mixed well.
- 2. Arrange chicken breasts in 9X13 baking dish, pour sauce over the top and bake, uncovered, at 350 for 45 minutes or until chicken is done. For the last 5-10 minutes of cooking, I put the oven on broil to "brown" the chicken a little bit.
Tips:
- Use boneless, skinless chicken breasts or thighs: This will make the chicken easier to cook and more tender.
- Pound the chicken breasts or thighs to an even thickness: This will help them cook evenly.
- Use a well-seasoned cast iron skillet: This will help the chicken brown and develop a nice crust.
- Don't overcrowd the skillet: If you do, the chicken will not brown properly.
- Cook the chicken over medium-high heat: This will help it brown quickly and evenly.
- Do not move the chicken around in the skillet too much: This will prevent it from browning.
- Use a meat thermometer to check the internal temperature of the chicken: It should reach 165 degrees Fahrenheit.
- Let the chicken rest for a few minutes before serving: This will help the juices redistribute throughout the meat.
Conclusion:
Catalina chicken is a delicious and flavorful dish that is easy to make. By following these tips, you can make a perfect Catalina chicken dish that your family and friends will love. This dish is perfect for a weeknight meal or a special occasion. Serve it with rice, potatoes, or vegetables for a complete meal.
