Creamy Baja Catalina Dressing
1/4 cup ketchup
1/4 cup red wine vinegar
3 tablespoons sugar more or less to taste (start with less)
1/4 cup mayonnaise
1/4 cup sour cream (may sub yogurt)
1 tablespoons reserved Cilantro Lime Marinade (in directions)

Steps:

  • Prepare Cilantro Lime Chicken according to directions, reserving 1 tablespoon marinade for dressing. Slice or chop cooked chicken. Meanwhile, whisk together all of the Dressing ingredients in a medium bowl, including the 1 tablespoon reserved Cilantro Lime Marinade. Store in the refrigerator. Best if chilled at least 30 minutes. 1 pound skirt steak, trimmed of excess fat and halved crosswise
2 bunches arugula (3/4 pound), tough stems discarded
1/2 cup crumbled Roquefort or other blue cheese (1/4 pound)

1 c salad oil, vegtable or canola
1 c ketchup (i use hunt's) but your choice
1/2 c suger
1/2 c apple cider vinegar
1/2 tsp worcestershire sauce (i actually do 3 shakes)
1/2 tsp salt
1/4 tsp pepper

  • 1. Measure everything in a small (2 qt) saucepan and whisk until you no longer see any oil separation.
  • 2. place pan on medium heat, heat stirring until sugar is dissolved, it doesn't need to come to a boil, just until the graininess is gone. cool and put in your MOST decorative container!
  • 3. This dressing keeps well in the fridge. I've had some for 6 weeks and it tasted perfect. Just give it a GOOD SHAKE!!!
