Number Of Ingredients 11

1 1/2 pounds ground beef
3/4 cup onion, diced
1 bell pepper, diced
1 taco seasoning packet
1/2 cup sour cream
1/2 cup mayonnaise
1 cup cheddar cheese, shredded & divided
1 small can (4 ounces) diced green chilies
1 (10-ounce) can Rotel diced tomatoes with green chilies
2 cups Bisquick
1 1/4 cup water, divided

Steps:

  • Preheat oven to 350°F Brown ground beef, drain off grease. Add in diced onion, bell pepper, taco seasoning and 1/2 cup of the water to pan. Simmer approximately 10 minutes until onion & pepper are softened. In separate bowl, combine sour cream, mayonnaise, 1/2 cup cheddar cheese and green chilies, set aside. Stir Bisquick and 3/4 cup water (you may need a tiny bit more water) to make a soft dough. Spray 13X9 baking pan with non-stick spray. Press dough into bottom of pan and bake 5 minutes. On top of biscuit layer, spread ground beef mixture, next add can of Rotel spreading over ground beef mixture, next spread the sour cream mixture and end with remaining shredded cheese sprinkled over the top. Bake 30 minutes.

Tips:

  • Choose high-quality beef for the best flavor. Look for well-marbled meat, as this will result in a more tender and flavorful casserole.
  • Brown the beef in batches to prevent overcrowding the pan and ensure even cooking. This will also help to develop a rich, caramelized flavor.
  • Don't be afraid to use a variety of vegetables in your casserole. This will add flavor, color, and texture. Some good options include carrots, celery, onions, potatoes, and corn.
  • Use a good quality beef broth for the best flavor. You can also use water, but the broth will add more depth of flavor.
  • Season the casserole well with salt and pepper. You can also add other spices and herbs, such as garlic powder, onion powder, paprika, or chili powder, to taste.
  • Let the casserole simmer for at least 30 minutes, or until the beef is cooked through and the vegetables are tender.
  • Serve the casserole hot, with mashed potatoes, rice, or noodles.

Cattle drive casserole is a hearty and flavorful dish that is perfect for a cold winter night. It is easy to make and can be customized to your own taste. With a few simple tips, you can make a delicious cattle drive casserole that your whole family will enjoy.
