  • Place cauliflower pieces through the feeding tube of the food processor using the grating blade; pulse until all the cauliflower is shredded.

1/4 cup grated Parmesan
1 teaspoon Italian seasoning
1/4 teaspoon kosher salt
1 large egg
2 cups freshly grated mozzarella
1/4 cup Spicy Pizza Sauce, recipe follows
Fresh basil leaves, for garnish
4 cups baby greens
2 tablespoons olive oil
1 tablespoon balsamic vinegar
Kosher salt and freshly ground black pepper
Parmesan shavings, for topping
1 to 2 tablespoons olive oil
3 cloves garlic, minced
1 medium onion, finely chopped
1/2 cup chicken broth
Three 15-ounce cans crushed tomatoes
1 tablespoon brown sugar
1 teaspoon red pepper flakes
Kosher salt and freshly ground black pepper

Steps:

  • For the pizza: Preheat the oven to 425 degrees F. Line a rimmed baking sheet with parchment paper.
  • Pulse the cauliflower florets in a food processor to a fine snowy powder (you should have about 2 1/2 cups). Transfer the processed cauliflower to a microwave-safe bowl and cover. Microwave until soft, 4 to 6 minutes. Transfer to a clean, dry kitchen towel and allow to cool.
  • When cool enough to handle, wrap the cauliflower in the towel and wring out as much moisture as possible, transferring to a second towel if necessary. In a large bowl, stir together the cauliflower, Parmesan, Italian seasoning, salt, egg and 1 cup of the mozzarella until well combined. Transfer to the prepared baking sheet and press into a 10-inch round. Bake until golden, 10 to 15 minutes.
  • Remove the crust from the oven and top with the Spicy Pizza Sauce and remaining 1 cup mozzarella. Bake until the cheese is melted and bubbly, 10 minutes more. Garnish with fresh basil leaves just before serving.
  • For the salad: Meanwhile, add the greens to a large bowl. Whisk together the olive oil, baslsamic and salt and pepper to taste in a measuring cup. Pour over the greens and toss. Top with Parmesan shavings.
  • Heat a pan over medium-high heat until hot. Add a tablespoon or so of olive oil, throw in the garlic and chopped onions and give them a stir. Cook until the onions are soft, 4 to 5 minutes. Add the chicken broth, whisking to deglaze the bottom of the pan. Cook until the liquid reduces by half. Add the crushed tomatoes and stir to combine. Add the brown sugar, red pepper flakes and salt and pepper to taste and stir. Bring to a simmer, reduce the heat to low and simmer for 30 minutes. Let cool, then puree the sauce.

Yes, really.......this pizza was made with a cauliflower crust! I can't tell you how excited I am about this recipe. When I first saw this posted I thought the pizza looked so appetizing that I knew I had to give this a try. I was a little skeptical but only because I didn't want to get my hopes up. I'm always trying to cut out a few carbs and I'm always craving pizza. I had all the ingredients on hand so I was happy to whip up an onion pizza, my favorite! Well.... let-me-tell-you, this is surprisingly-unbelievably-amazingly good!!! Pizza night is officially back!!!

1/2 head of a large cauliflower
1 large egg
1 teaspoon minced garlic
1 teaspoon oregano
fresh ground pepper
1 1/2 cups shredded mozzarella cheese
1/4 cup of shredded parmesan cheese

1 cup vegetables

Steps:

  • Preheat the oven to 400 degrees.
  • Break the cauliflower into floret's and use a food processor or cheese grater to shred the cauliflower into little bits. It takes about 10-12 pulses in the food processor to get the right consistency, being careful not to over process and make a puree.
  • Transfer to a large bowl and cook in the microwave, uncovered, for 8 minutes on high heat. It is not necessary to add water, the cauliflower will steam on it's own.
  • Let the cauliflower cool slightly and mix in all remaining crust ingredients.
  • Spray a pizza pan or sheet pan with non-stick spray liberally and spread out the mixture. Go for a pretty thin pizza, this will ensure crispiness. Spray the top lightly with cooking spray.
  • Place the crust in the oven and cook for 20 minutes. It will get crispy and dark in many areas. Important tip: before you top the crust with toppings, be sure to take a large spatula and very gently loosen the bottom of the crust from the pan. This will prevent it from sticking as you cook it further.
  • Top the crust with your favorite toppings and bake until cheese is melted, about 10-15 minutes, and turn on the broiler for 2-3 minutes to crisp the top to your liking.

  • Spray a non-stick pan liberally with non-stick spray.

  • 3. In a medium bowl, combine cauliflower, egg and mozzarella. Press evenly on the pan. Sprinkle evenly with fennel, oregano and parsley.
  • 4. Bake at 450 degrees for 12-15 minutes (15-20 minutes if you double the recipe).
  • 5. Remove the pan from the oven. To the crust, add sauce, then toppings and cheese. Place under a broiler (grill for the Europeans) at high heat just until cheese is melted.
  • 6. Notes: *I use frozen cauliflower prepared according to package directions. After cooked and slightly cooled, I shred cauliflower with a cheese grater, and then measure for the recipe. (Don't pack down the cup with cauliflower. Just fill it with a spoon or the cup itself.) ** The pizza sauce I use is Great Value Pizza sauce from Wal-Mart. At only 3 net carbs per quarter cup, you get a lot of punch for little carbohydrate pow. *** You can try re-baking the pizza at 450 once you add toppings if desired, but the crust is not quite as crusty. There is a minimal difference, so see what works best for you.

If you'd never heard about pizza before and someone served this to you, I think you'd really enjoy it. Texture aside, the flavor of this final product was very pizza-like, and I'll be doing further experiments to be sure.

1 head cauliflower, cored and separated into florets
½ cup water
½ teaspoon salt
2 ounces fresh goat cheese
½ ounce finely grated Parmigiano-Reggiano cheese
1 large egg
1 pinch cayenne pepper, or to taste

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
  • Puree cauliflower in a food processor until finely ground.
  • Cook ground cauliflower, water, and salt together in a skillet over medium-high heat until fragrant and most of the water evaporates, 5 to 6 minutes. Cool completely.
  • Transfer cauliflower to the center of a clean dish towel. Wrap and squeeze tightly to remove all excess moisture. You should have about 1 1/2 cups cauliflower pulp.
  • Stir cauliflower, goat cheese, Parmigiano-Reggiano cheese, egg, and cayenne pepper together in a bowl to form a soft dough. Gather dough into a ball and place in the center of the prepared baking sheet. Press dough into circle about 1/4-inch thick.
  • Bake in the preheated oven until golden brown and set, about 40 minutes. Cool and turn crust over before topping.

I adapted this from recipes for cauliflower crusts. It takes a wee bit of work to squeeze out the cauliflower "rice", but it's still simpler and less work than a conventional crust. Gluten-free, grain-free, starch-free.

1 large head cauliflower, made into "cauliflower rice"
1 c almond flour
(blanched white type from skinned almonds, vs brown skin left on type)
1/3 c monterey jack cheese, finely shredded
1 Tbsp fresh oregano, chopped, or 1 tsp dried
(or other seasonings as desired)
1/4 tsp salt
1/8 tsp pepper

Steps:

  • 1. To make the "cauliflower rice" (you can do this a day ahead and refrigerate): Put water on to boil for steaming the cauliflower. Trim and wash the cauliflower. Place cauliflower in steamer and steam just until it easily breaks apart with a fork - you do want not to make it tender though! Remove from heat/steam. With a flat style potatoe masher or a large spoon or something else that will do the trick, "mash" or "rice" the cauliflower to break it apart into rice-like pieces - if you have a good pot-type steamer you can do this right in the steamer (empty out the hot water from your main pot first!) which will have the added benefit of allowing any water being pressed out in the process to drain away; if not, transfer to a colander or the (emptied) pot or a bowl and "rice". Now you have "cauliflower rice" (no need though to get nearly as small as rice for this recipe, just well broken up). If you have the cauliflower in a steamer or colander that allows you to press and drain the water out, at this point you can use your masher or whathaveyou to press out all the water you can. Allow to cool.
  • 2. Squeeze out the cauliflower rice - the work part! You can do this step a day ahead of time and refrigerate: Plop the "riced" cauliflower in a ball in the middle of a teatowel (floursack type works best) or a few layers of cheesecloth, bring the corners of the towel up and twist it up into a little bag. Then squeeze out all the water from the cauliflower you possible can by any means you possible can.
  • 3. To make the crust Yet another step you can do a day ahead and then refrigerate: Preheat your oven to 400 degrees F. Line your pizza pan with parchment. Plop the by now completely abused cauliflower and all the remaining ingredients in a bowl and mix - it's easiest and the most fun to do so by hand, like playdough. Plop the dough in the middle of your parchment lined pan and press out into a nice pizza crust (about 1/4 inch thick), forming a thicker crust edge to keep your toppings in and be more pizza-like. Bake until nice and browned and crusty looking, about 20 minutes. Your pizza crust is now ready to top or save for later.
  • 4. Top in any way you desire, bake at 400 degrees F until your toppings are done (cheese melted etc).
  • 5. Topping Idea: Brush crust lightly with extra virgin olive oil. Rub with a cut garlic clove. Top with sliced tomato, cheese and basil. Bake until cheese melts. Lightly salt and pepper, drizzle with a little extra virgin oil and maybe some balsamic vinegar. Tips:
