1 cup Miracle Whip
1/4 cup grated Parmesan cheese
2 tablespoons sugar
1 tablespoon finely chopped onion

1 small head cauliflower, broken into florets
1 package (10 ounces) fresh spinach, torn
1 cup sliced fresh mushrooms
1/2 to 3/4 pound bacon, cooked and crumbled

Steps:

  • In a small bowl, combine the first five ingredients. In a large salad bowl, combine cauliflower, spinach, mushrooms and bacon. Add dressing and toss to coat; serve immediately.

2 1/2 cups bite-sized broccoli florets
2 1/2 cups bite-sized cauliflower florets
2 eggs, lightly beaten
1 cup grated Parmesan
1/2 to 1 cup olive oil
1/2 teaspoon kosher salt
4 cups lightly packed fresh spinach leaves
1/2 lemon, zested
1 lemon, juiced
1/4 cup extra-virgin olive oil
1/2 teaspoon freshly ground black pepper

Steps:

  • Place the broccoli and cauliflower in a large bowl. Toss with the beaten eggs to coat evenly. Place the Parmesan in a large tray or baking dish and dredge the vegetables in the cheese, pressing to coat evenly. 3 c cauliflowerets
1/2 lb spinach leaves
6 Tbsp canola oil
3 Tbsp vinegar
1 garlic clove, crushed
1/2 tsp salt
1/2 tsp dry mustard
1/2 tsp basil leaves, dried
1/4 tsp pepper
1/2 c almonds, slivered

Steps:

  • 1. Rinse and drain cauliflower and cut into small flowerets.
  • 2. Wash and trim spinach.
